I'm a grad student working towards a M.A. in History, with two small boys and a husband whose working on his PhD in Biochemistry. Life is fairly hectic...to say the least.
My favorite things to cook
I love casseroles because with our schedule, they fit in perfectly. I also love baking, especially cookies. Every Christmas I make at least 9 different kinds of cookies and bring them to work to share with my co-workers or give them as presents to friends.
My favorite family cooking traditions
Every family get together, my mother always made broccoli casserole. With its breadcrumb crust and broccoli/cheese filling, we all loved it. It was the first dish I ever made for my husband.
My cooking triumphs
Teaching my cooking-inept husband how to make beef stew. It was a great accomplishment...for both of us. Before he met me, he couldn't make a grilled cheese sandwich or even Hamburger Helper. Now his meatloaf is even better than my own.
My cooking tragedies
I once made this scallop/tomato pasta dish and for some reason it turned out awful. I don't know what went wrong but it was horrible. Something I will never attempt again.

Runza (meat pies)
This is very popular in my house but I only gave it 4 stars because of the changes I made. I doubled the dough and used 1 1/2 lbs meat, sauteed with garlic and onion. I also added kitchen bouquet, worcestershire sauce, thyme, oregano, hot pepper flakes and hot sauce to the meat mixture and 2 c. of mozz cheese. We just like a lot of spices and flavor and I thought just salt and pepper would be too bland. My husband and youngest son can't get enough.

Slow Cooker Chicken Taco Soup
This is one of my family's favorite recipes, although I only gave it 4 stars cos I alter it a little bit. I add a little spice using some hot sauce. I also use chicken broth instead of beer. I tried the beer but my family prefers chicken broth. I also use kidney beans or two cans of chili beans. And to cut down on cost, I use chicken thighs, which works just as well. But this is the most requested dish by my family and friends.

Baked Pork Chops I
My entire family loves this, even my husband, who normally doesn't like pork chops. Friends always ask me to make it if I invite them over for dinner.
