Crispy Vegetable Pakoras

I think it needs baking powder. I would also double the spices and season the veggies before battering.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

Reviewed: Apr. 3, 2009
Yummy base recipe, though I changed it quite a bit. I started with sautéing a large sweet onion, adding 3 cloves minced garlic and a pinch of red pepper flakes and a pinch of italian seasonings. I then added two bunches of spinach (I didn't have chard), then added 1 whole can of rinsed garbanzos, then 1 sliced tomato. I simmered on low, adding dashes of turmeric, cumin, cayenne, ground ginger, and garham masala. I finished to perfection with 1/2 a lemon and some ground sea salt. Soooooooo delicious and nutritious. I doubled the recipe, and there were no leftovers! A vegetarian delight!

Beef Burgundy Casserole

This dish is absolutely delicious and so easy! The important thing is to keep the dish VERY tightly sealed when cooking. It will cook nicely in its own juices. Pick a meat with a moderate amount of fat. Cook for less time if reducing the recipe. It really is wonderful, and I am picky..........EDIT....... BAH! DRAT! I made this dish at a friend's house and it started burning at 3 hours ( I smelled it)... I realize now that the secret to my success was the SHALLOW PAN I was cooking in.. A 5x5x2 glass dish, tightly sealed with foil. I tried a deep dutch oven and it DID NOT WORK. I hope this helps you. xxx

Vegetarian Tortilla Soup

I loved this recipe. I only would reccommend adding a bunch of cilantro. Be sure to add the chips immediately before eating 'cause they get soggy fast. It was even better the second day.
