Swiss Cheese 'n' Onion Quiche

Baklava

This is a GREAT recipe! I don't think I'll ever go back to buying baklava again! Like other reviewers, I lightly toasted the nuts. I personally, really like the combination of pecans, walnuts and almonds. And, used only cinnamon to flavour the nuts. Instead of making them in the 9 x 13 pan, I cut the dough into four even sections length wise. Buttered one strip. Filled the corner of one strip with the nut mixture and folded the pieces into small triangles. Then butter another strip, rewrapping the triangle. I cut three slits on the top and baked for about 30 minutes. This way makes a really crisp and flaky baklava. But, it is really time consuming. (to get a sense of how the triangles are made take a look at the cranberry phyllo triangle recipe on this site.)

The Whole Jar of Peanut Butter Cookies

Fantastic! This is definitely my new go to recipe for peanut butter cookies! I did make a few minor adjustments though. First, I used crunchy peanut butter instead of smooth. Then, I added - reese peanut butter chips and chocolate chips. I baked the cookies for 11 minutes and let them cool on the baking sheet. The only change I may make in the future is a touch more vanilla. These are my new fav! You have to try them.

Braised Balsamic Chicken

Great flavour! I did make a few changes though. I followed the advice of one of the other reviewers who suggested adding some chicken stock to mellow out the flavour of the sauce. It was a great idea and really rounded out the flavours in the tomato sauce. I added a teaspoon of sugar to lessen the zing of the tomatoes and balsamic. And, finally, I added some chilli flakes, just because I prefer a little heat in my dishes. Great recipe - I will definitely make this a part of my regular line up.

Brooke's Best Bombshell Brownies

Really good brownies! The texture of these brownies were great, they were simple to make and everyone who ate them really enjoyed them (including myself). I will definitely add a little espresso to the mix next time to up the chocolate flavour. But overall, these were delicious.

Buttery Corn Bread

Awesome cornbread! I don't always love cornbread, but this is one recipe that is delicious. It's not gritty, it's lightly sweet and has a rich buttery flavour. Yum!

Addictive Sweet Potato Burritos

I really enjoyed eating these! This recipe is super-easy and delicious. I didn't have cayenne, but I did have chipotle pepper which I added to the spices for the beans. As finishing touches, I added sliced green onions and chopped parsley (I would have used cilantro, but I didn't have any on hand). These were great reheated or even served at room temperature. Thanks for this healthy and tasty recipe.

Banana Sour Cream Bread

This banana bread was beautifully moist and tasty. When I made it, I halved the recipe and reduced the sugar by a half-cup and added an extra banana. In the future, I will add a few more spices - nutmeg and some clove, would definitely be a fragrant and welcome addition. And, for fun I'll add some chocolate chips. I think white chocolate or milk chocolate would be a tasty and decadent addition.

Stir-Fried Chicken With Pineapple and Peppers

I did enjoy this recipe, however, it didn't quite have the oomph I was hoping for. It may have been because I didn't use any mirin, which, unfortunately, I didn't have on hand. :( In the future, I will definitely add the mirin as called for, a half-tablespoon or sriracha (thai hot sauce), 1/3 cup dry roasted cashews, and more garlic, ginger and if I have some on hand, cilantro too!

Chocolate Crinkles II

I made these cookies this evening. While they look beautiful and have a nice texture, they just didn't have the intense chocolate-y flavour I was hoping for. If I make them again I will definitely increase the chocolate content, and probably add a little cinnamon for additional flavour.

Hot Bean Dip

Great recipe! I made it for company last weekend (and Boxing Day weekend), and not one ounce was left! I did halve the recipe the second time I made it, I found that the original recipe made A LOT of dip. I made a few modifications to the recipe. I substituted fresh cilantro for the dried parsley. I added a 1/4 cup of Tobasco. I added finely diced onion, sweet peppers and mushrooms. And, I added the cheese to the top about 5 minutes before it was done. I hope that you enjoy this as much as everyone else did!

Big Soft Ginger Cookies

These cookies really are amazing! I have never really been a huge fan of ginger cookies, but these are very delicious! I followed the directions, however I used a few of the fantastic tips that the other reviewers had. I used 1 tbs. of orange juice instead of water (great tip!), I used butter instead of margarine (my preference) and rolled the cookies in sugar. The dough *is* really soft, but it was fine once it hit the sugar it was being rolled in. I did flatten out the cookie quite a bit and they came out perfectly. Thanks for the recipe, it's wonderful! And thanks for the great tips everyone. :)

Tiramisu II

I loved this tiramisu, and so did everyone else! It was hands-down the BEST tiramisu I ever made. I made only two minor adjustments. I added a little vanilla to the custard mixture. And, I used Kahlua instead of rum. It was just fantastic!

Baked Potato Casserole

I made this according to the recipe and it turned out great. I made it as a side dish when I had company over. Everyone really enjoyed it. I loved how simple this was to make. I also kept some additional bacon bits on the side in case anyone wanted to sprinkle some more on the top!

Peanut Butter Cup Cookies

I made these cookies according to the instructions and took the advice of freezing the peanut butter cups (a great tip, btw!). These cookies came out beautifully. I made them as part of the sweet selection for Boxing Day. Everyone talked about how good they were!

Quick Skillet Chicken and Macaroni Parmesan

This was a fantastic starting point for a recipe. I definitely added a few more spices - basil, oregano and chilli flakes. To make it a little more special, I made a lovely topping of bread crumbs, freshly grated parmesan cheese, fresh parsley and olive oil. I sprinkled it on the top before baking and it created this light and crispy topping that my husband raved about.
