Becki's Oven Barbecue Chicken

This was fabulous! I changed it a little to adjust to my family's taste. I used 1/2 the ketchup as recommended by other cooks and added hot sauce and garlic to the sauce. Also, I sprinkled seasoned salt on the wings. I prepared them the night before and let them marinade overnight. I used the oven method but cooked them for a full hour. They were great as leftovers too, so make extra! Definitely use foil in your pan...

3-Cheese Pasta Bake

This made a great side dish. I added a can of spicy Rotels and some mustard powder. I also put some bread crumbs on top and sprinkled the parm cheese on top rather than mixing it in. This is a good recipe that could easily be made into an entire meal.

Salsa Chicken Rice Casserole

This was delicious! The only thing we did differently was sautee the chicken with onion and spices, rather than boil it. I also put spicy chili beans rather than chicken on one half of the casserole, because I am a vegetarian and the rest of the house is not. Also, substituted cream of celery for the cream of chicken. Definitely will make this again!

Jenn's Out Of This World Spaghetti and Meatballs

This was such a hit at my house! I did change it a little, only added two pinches of brown sugar rather than what the recipe called for. I also added a little bit of beef bouillon and some additional Italian seasonings. I made the meatballs really big and cooked them for several hours. This is my new meatball recipe!

Broccoli and Stuffing Casserole

This was delicious! I used one bag of frozen broccoli. I didn't bother with layering and just mixed everything together and added the cheese on top toward the end of cooking. I added minced garlic and red pepper flakes, because I add that to everything. Also put in some paprika. This was the best dish on our Thanksgiving table!

Four Cheese Macaroni

Omitted the eggs and used 2 cups half-n-half as recommended in other reviews. I also added crushed red pepper, used a spicy Velveeta, added 1/4 cup bleu cheese and subsituted cheddar and monterey jack for the expensive muenster. I brought this to the company party and it was eaten up. I will surely make this again!

Vegetarian Tortilla Stew

This was delicious! We all ate it up at my house. It was very spicy, probably because I added chiles. I didn't put any meat substitute in it. I also didn't rinse the beans. I think next time I will use 2 cans of beans. Also, I didn't have any bullion so I used one envelope of Lipton Savory Veggie Soup mix.

Enchilada Casserole

This was delicious but had way too much onion in it (and I like onions!). I used salsa instead of enchilada sauce, cream cheese instead of tempeh, omitted the olives and added a can of corn. I'll definitely make it again but will only use 1/2 an onion.

Vegetable Swiss Chicken

My hubby loved this dish, and he is very picky. I added fresh basil and parsley, as well as dried oregano and thyme. I served it over buttered egg noodles.
