Jim Kaczmarek's Chili

Kid tested and mother approved!! Good Sunday afternoon football chili! Left out the extra salt and everybody, kids and old dogs alike, loved it! Had a little of Rhonda Mellots' Baked Corn (bread) with it, then died and went to heaven!

Chile Verde II

So good. Boiling the tomatillo and chiles is a great idea. Was so good my 15 year old son who only likes cheeseburgers loves it! (Dredging the pork in flour is also a plus!)

Cheesy Pork Chop Casserole

Turned out really well. Used a small bag of frozen hash browns and seasoned the chops with lemon pepper. Mozzarella instead of Jack because thats what we had. Buttered green beans and applesauce closed the deal!

Yummy Artichoke Dip

Always reliable and last minute hit for quick get togethers. i have made this several times and have got it to where I can make it my sleep. I chop the artichokes in a food processor along with a pickled jalapeno and beat all ingredients together with a mixer.

Awesome Sausage, Apple and Cranberry Stuffing

This stuffing is really good ummmhmmmmm... Did not stuff the bird with it, but baked it in a dish at 350 for about half an hour used a little extra wine and some stock to keep it moist. My new favorite comfort food with gravy.. I personally thought we didn't even need the turkey!

Swiss Steak Quick and Easy

This is EXCELLENT! Doubled the recipe and added lemon pepper to the flour when dredging. Used italian style canned tomatoes and the crock pot. Could not ask for a better cool weather meal.We had noodles this time, looking forward to mashed potatoes!

Bodacious Broccoli Salad

This is a great salad. Today though I sauted the onion with the bacon and used rice vinegar instead of wine vinegar. Wow! A simple, great tasting variation with a more smooth flavor.

Sloppy Joes II

Easily the best and most simple SJ recipe ever! Doubled the recipe and tweeked it a bit for our taste (no grn. pep. substitute a little bbq for some of the ketchup a little less brown sugar a little more mustard). Great on fresh bakery rolls with some fruit on the side...

Mexican Style Meatballs

Quick, easy and versitile! Made with double the chiles and baking the meatballs for a speedy clean-up, these are now on our list of favorites. One night with cornbread, the next with quesadillas and seedless red globe grapes, these meatballs made an after school, work and activities dinner enjoyable and satisfying.

Guadalajara Soup

Great in its simplicity, just as it is! Any cut of cubed, browned pork works well, and with a little queso fresco on top of your bowl of soup and a slice of warm cornbread (our not so mexican contribution!) this is a good cold weather meal.
