Steph's Summer Salsa

I am challenged when it comes to cooking or preparing foods. As such, it isn't clear to me if the corn in this dish is supposed to be cooked or not. And, if it is coming straight off the cob, how does one best keep the kernels in tac.

Fettuccine Alfredo V

I really enjoyed this recipe. Careful, it is really rich (fogedabout calories!) but this is just the taste I was looking for. I wish I would have cut the recipe in half as it was way too much. I used canned, grated parmesian/asiago & it was a bit too salty but quite cheesy.

Beef Barley Lentil Soup

Mmm-mm good. I used beef stew meat instead. Only used 1/2 c lentils with the barley & this was more than enough for 2 kids, hubby & me. 7 oz of stewed tomatoes gave enough flavor though more would have been ok.

Hearty Hash Brown Dinner

While this probably isn't the most healthy meal, even for a crockpot, I was surprised to find this odd combination to be tastey! Leave out the FF onions & it's a kid-pleaser. I used 1/4 tsp salt & Healthy Request cr. mushroom, I also improvised using powdered milk, shredded cheese, onion flakes and 1/2 frozen tater tots with the hash browns,neither of which were thawed but no problems. I added a can of corn & the cheese at the end. My husband loves food like this.

Hermit Bar Cookies

I've been looking for a molasses-type "cookie" & this is the first one I've tried. It is a bit stronger in over-all flavor than I anticipated, but maybe more important is that it is not as sweet as I would've liked. I am definitely adding some icing this time, and am wondering how brown sugar would do next time, either that or just add more sugar.

Crispy Walnut Maple Waffles

I like this recipes because it doesn't have eggs. I used rice milk instead of cow's. I had to add MUCH more water & milk to create a "pourable" batter. The waffles were a fairly crunchy coming out of the waffle baker. Flavor was a little bland but acceptable for an egg-less recipes.
