Pumpkin Chocolate Dessert Cake

I used some of the modifications to fit what we had, sour cream instead of apple sauce and evaporated milk in stead of heavy cream. I also omitted the pumpkin pie spice this time for a more chocolate flavor. As usual I added 1 cup whole wheat and 2/3 cup wheat germ with 1 cup white four and a couple TBSP of ground flax. The glaze is very praline like and delicious, would also be good with chopped nuts. The cake is very moist and rich. Delicious!

Savory Meat Loaf

I haven't ever been much of a meatloaf person but this recipe was delicious and most likely the one we'll always use from now on. My younger children loved it which is a big plus. I used ground turkey as we usually do in meat dishes and it turned out wonderful, though the loaf shrank a bit while cooking. A lot of sauce, next time I may try to mix some into the loaf beforehand. Moist and soft yet held its shape. Also, I used some BBQ sauce to get the 3/4 cup ketchup and it was wonderful!

Roasted Sweet Potato Corn Chowder

With a few modifications our version was delicious! I used a can of creamed corn in place of corn puree and a can of whole corn in the end. I ended up using an extra cup of broth to total 4 cups and there was enough liquid. I also doubled the potato to 2. At the end I used dried parsley in place of fresh and a bit of salt and pepper to spice it up. It was a hearty soup that is great for Fall or anytime!
