About this Cook
I am married with 4 daughters, 16,14,12,9 years old. I am a nurse and don't get to cook or bake as much as when I was a stay at home mom. I miss it! I love to try new recipes along with our old faves!
My favorite things to cook
I like to cook things that I know my family will enjoy. I love sitting down to the table and watching my kids and husband really like the food I cooked for them.
My favorite family cooking traditions
I make a blueberry pie every Thanksgiving since I was 15 years old. I found a recipe in a magazine and have tweaked it over the years. Now, it would be a tragedy if I didn't bake it every year.
My cooking triumphs
My oldest daughter constantly asks for me to make my cheese manicotti. My clam chowder is really big hit. It is something the entire family loves. That's a triumph!
My cooking tragedies
When I was first married, I remember I was baking for the holidays. I was new at all of this and whatever I was making called for some things to be mixed in one bowl and other ingredients to be mixed in another bowl. I was the one who got mixed up though and when my husband found me crying and asked what was wrong, all I could say was "I put the sugar in the wrong place!" I learnd that day that recipes don't always need to be followed exactly. Everything turned out OK. Sometimes when I am upset my husband asks if I put the sugar in the wrong place, 17 years later!

Blueberry Coffee Cake I
I'm not sure what happened, but this did not turn out very good. It broke apart in chunks and the taste was not that great. It stuck to my bundt pan on the bottom. I would not make this again.

Brown Sugar Meatloaf
This was the best meatloaf I have ever had! It was incredibly moist and didn't fall apart. I made some minor changes; I added 1-2 tablespoons minced garlic, 1 tsp thyme, and 1 tsp rosemary and omitted ginger. Also, I put the loaf in a shallow baking pan and covered it with the glaze. instead of it being on the bottom. It was quickly eaten at dinner- no left overs! Highly recommend!

Apricot Nut Bread
I tried this recipe because I had some canned apricots I wasn't sure what to do with. I would absolutely make this again. The whole family loved it. I did make 2 changes; I sustituted margarine for the shortening and I substituted pecans for the walnuts. It was moist and the flavor was great!
