Sweet Potato Apple Scallop
I made this for Thanksgiving this year and it was the best Sweet Potato dish I have ever tasted. I have never been a fan of those sweet gooey sweet potato dishes covered in marshmellows. The only change I made was to peel and slice the potatoes before boiling, and it tasted great that way. Several reviewers skipped the pumpkin pie spice and orange extract. In my opinion the orange flavor is what made it so good! One important note...I would say that half of the people at my table didn't care for this dish and did not take seconds. I believe that was because they were expecting the regular sweet recipe and this recipe was not that. Keep your guests in mind when making this recipe. Even though I found this dish to be delicious, I know some of my guests were disappointed in the light, fruity flavor of the dish. I will never make another sweet potato recipe other than this one again. This is a keeper!

Oven Roasted Trout with Lemon Dill Stuffing
I didn't care for this recipe. The stuffing was too dry and we couldn't taste the fish. I am not sure if this was because my trout were only 10" long and there was too much stuffing or not. Next time I'll just focus on a trout recipe that doesn't try to overpower or cover up the wonderful taste of fresh caught trout.
