Bread Pudding III

This is exactly what I envision when I think of bread pudding. A perfect combination of flavors and so easy to make. The only issue I had was in a part of the process. After mixing the bread cubes with the cinnamon, raisins and butter I found that most of the raisins congregated in the middle after I transfered the mixture to the baking dish. A minor issue, but next time I will place half the bread crumbs in the dish, sprinkle half the butter, cinnamon, and raisins then repeat. Also, because I lOVE the taste, I increased the nutmeg to about 1/2 tsp. I plan to experiment with flavors in my next batches by using peaches, apples, cherries, blueberries, or raspberries instead of raisins.

Turkey Pot Pie II

This was really good. I used store bought pie crust and followed the advice of another reviewer by using 1c evaporated milk rather than the 1/2 c regular milk. I didn't want to make more dirty dishes so I used minced onion instead of fresh. I also added salt, pepper, garlic powder and parsley. Very easy and a great last minute dinner solution.

Zucchini Bread

Dry and bland. was only worth eating in heated slices with lots of butter. But I still tasted mostly butter. Very disappointing.

Pumpkin Fudge

Chalk it up to user error but I've never had any luck with fudge, and this recipe was no exception. It wouldn't set. I had a pumpkin goo that tasted really good. But I don't think it's any fault of the recipe. I'm just going to stick to EATING fudge.

Carrot and Ginger Soup

I had a Carrot Ginger soup in a restaurant in Atlanta but since I've moved away I've been trying to find a recipe. This one is awesome! A great blend of flavors and the consistency was very nice. Very easy to make with an immersion blender.

Sugary Orange Peel

This was time consuming, but well worth the effort. during each of the cooking phases I was able to work on other confections so it really didn't seem to take a lot of work. I included this as part of a candy gift basket and I started getting phone calls asking for the recipe. I followed the directions to the letter and it yielded much more than I expected. The only thing to be aware of is the drying time. It needs about two days or it will become wet and sticky again when piled together. I'm considering adding a few cloves and/or cinnamon to the water during cooking for a spiced orange flavor.

Twice-Baked Sweet Potatoes With Mini Marshmallows

These were SO GOOD!! I made 4 changes: add brown sugar (to taste), add 1 egg white, omit the pepper, and omit the milk (I still used the Buttermilk it called for). The sweetness went all the way through and they held together well. I also chose smaller sized yams so the skins wouldn't fall apart so easily. There were no leftovers from the Christmas dinner table. These will are now a new favorite!

Cinnamon Rock Candy

This was really easy and yeilded enough for all my holiday gifts in one batch! I went to my local organic grocery store and bought essential oils for the flavoring. Be sure to break the pieces small as they take quite a while to dissolve in your mouth and are not really good for crunching. Also made another batch with green coloring and peppermint flavor. YUM!!

Eggnog Fudge

Disaster. I followed the recipe instructions but reduced the sugar by 1/2 cup based on other reviews regarding the sweetness. When I added the chips they would not melt. I had to put the pot over heat again and they still would not melt. I finally just poured it into the pan and after two hours it still had the consistency of jelly. I was so excited to try this. What a disappointment

Sweet Potato Puffs

Not impressed. I was eager for these to taste good and I even tried three different types of crumbs: graham cracker, cinnamon graham, and gingersnap. Other reviewers said the balls cracked open and the marshmallow oozed out. I put a thick coating of potato over the marshmallow to combat this, but it didn't work. They cracked open a little while cooking and when I transfered them from the cookie sheet they almost fell apart. I ate them anyway and they were just ok, nothing special. The coating started getting soggy during the meal and they could have used some butter for more flavor in the mixture, but it's not worth the hassle. For those of you that may like them, try the gingersnap crumbs. Better flavor than the grahams.

Fruit Cocktail Cake with Sweet, Buttery Sauce

This was phenominal! So moist and easy to make. A previous reviewer said not to use your Kitchenaid mixer because it didn't chop up the fruit. Well, I used mine with the white flat beater, and after the batter was mixed I turned the speed up pretty high. This broke the fruit up into smaller chunks but still kept them a good size to taste them in the cake. I'm happy to say I'm not afraid of fruit cake any more!

Sioux Indian Pudding

This was easy to make and the flavor was wonderfully intense. I added the dry ingredients slowly with a whisk so as to avoid lumps and may have ended up cooking it too long. It passed the thickened stage, became runny again, and stayed that way through the baking. After refrigerating the consistency was much thicker. It's perfect warmed in a bowl with a scoop of vanilla ice cream.

Spicy Turkey Burgers

Wow! This has got to be the best turkey burger I've had. The seasonings were out of this world and the fresh cilantro exploded with flavor in every bite. I grilled it and added a slice of Provalone then placed it on an onion burger bun with Chipotle mayo.

Squash Casserole I

My husband had never had squash casserole before and he crinkled his nose like a 5 year old when I mentioned I was making it. He was sold after the first bite! He even bragged to his mom! Great recipe. I will definatley make it again.
