Thai Pineapple Chicken Curry

Pan Seared Lemon Tilapia with Parmesan Pasta

It was okay. The flavour was good, but the look was terrible. Beige with a side of beige. I served it with mixed roasted veggies (cauliflower, broccoli, carrots, and snow peas), which helped the appearance a bit. It was fairly quick and easy, although it took a little juggling to have it all ready and hot at close to the same time. My husband liked it (especially the pasta).

Amazing Hawaiian Chicken Chili

I halved and simplified this recipe (omitted roasted red pepper, butter, used onion powder for onion, did not marinade chicken first). It reminded me of my baked beans, but with chicken. The people I served it to enjoyed it, and the leftovers were excellent. 4 stars, not 5, for being a little unnecessarily complicated in the recipe.

Definitely the most delicious healthy muffin I've ever made. It isn't overly sweet, so the chocolate chips are definitely key.

Chicken Noodle Salad with Peanut-Ginger Dressing

A great way to use up leftover spaghetti, and even better the next day than when I served it. I found the amount of dressing to be fine, although I'm not sure exactly how much spaghetti I used.

Chocolate Dipped Orange Biscotti

I made one batch using a mixer and it required about 1/2 cup more flour. Then I mixed one by hand, and 1 cup of flour was enough. I think that might explain why some people think the recipe is perfect and others have problems. One batch with cranberries and white chocolate, one batch as written: the perfect gift for my mother-in-law. Thanks!

Salad with Prosciutto and Caramelized Pears and Walnuts

I scaled the recipe to just 2 servings and didn't reduce the orange juice (just used less). The carmelized pears and walnuts were fabulous, and the vinagarette was delicious. It didn't thicken, but vinagarette is typically very thin. Served with a ham and cheese quiche for a great meal - the salad was made while the quiche cooked, and everything came out at the same time.

Hearty Hot or Cold Roasted Tomato Soup

My "roasted" garlic was charcoal by the time it spent an hour in the oven, and I drastically cut the stock (used more like 2 cups, not 1 quart). Nice flavour, though, and a great way to use up tomatoes.

Seven Minute Frosting I

Tip to people having problems with sugar crystals or getting it to beat up stiff enough: add 1/4 tsp of cream of tartar. It will prevent sugar crystals and makes egg whites beat up lighter. This is the stuff childhood memories are made of.

Flax and Sunflower Seed Bread

Always rises to a beautiful loaf! I've made it with and without the sunflower seeds, and it turns out well either way. I usually mix in the bread machine and bake in the oven.

Sweet Potato Pancakes

I tried to like these, I really did. I baked the pancakes for 10 minutes at 350*F after frying, to be sure they were cooked through. Overall, they were okay, but it really isn't a secret what they're made of. Too much work for what ended up tasting exactly like sweet potatoes.
