Quinoa Turkey Stuffing
As I wasn't roasting a turkey, I cooked the quinoa in chicken stock, then added the other ingredients (omitted the salt because of all the salt in the stock) and just microwaved it for an extra 5 minutes or so. Tastes great! Can't believe how healthy it is, and would happily serve this to guests.

Garlic Rice
Excellent use for leftover rice; served it with chicken and corn on the cob. Delicious!

Warm Mango Salsa
Cooked this up as a topping for pork chops - very tastey! I used a food processor to finely chop the onion and jalepeno. Not very hot - could probably leave the seeds in to get a bit of bite.
