About this Cook
I am the oldest of 6, so I have been cooking for a crowd my whole life. Now that it's just me and hubby, I'm working on focusing on quality over quantity. The 9-5 routine can take a toll on our weeknight meals, so I am always trying to find quick but delicious dishes.
My favorite things to cook
I love creating dishes that look and taste like they are from a restaurant. I have a craving for any thing pasta, so I do find myself looking for new takes on old favorites.
My favorite family cooking traditions
For birthdays, my mom always made the meal of your choice. It was a great tradition that brought the family together for food and fun.
My cooking triumphs
I have a perfectionist attitude towards my menu. Every week I plan out what meals we are going to have so I can make my grocery list. This practice has also carried over to dinner parties we host, and the time spend on the menu really pays off. I also love pairing the appropriate wine or cocktail with a meal.
My cooking tragedies
After cooking pork tenderloin for a guest, I spilt the gallon of tea all over the meat and twice-baked potatoes. The gracious guest, seeing my tears well up, attempted to eat it anyways! It was mortifying!

Foil Barbecued Trout with Wine
The hubby loved it. I added garlic as others suggested. This is a good trout recipe that can be built on.

Oven Roasted Trout with Lemon Dill Stuffing
Great way to cook fresh trout! The stuffing was amazing, so next time I think I'll make more to eat as a side dish as well. I also added a glug or two of white wine to the stuffing to moisten it up more than just the olive oil. Also, instead of using lemon zest, I used lemon pepper I had on hand. I also sprinkled that on top of prior to roasting. Can't wait until the hubby brings some more trout home!

Four Cheese Macaroni
This was amazing! I took it to a pot luck at work, so I made it the night before and warmed it up in a crock pot the next day. I took others advised and cut the eggs, and amped up the cheese! I cooked a cheese sauce over the stove by mixing milk and velveeta and then adding the shredded cheese. I also through in some ricotta cheese that I had in the fridge, and that really made it nice and creamy! I crumbled bacon to put on top, and the crowd went crazy!
