About this Cook
I'm married with no children, but we have several wonderful pets to keep us busy. Also, I've been a hairdresser for several years and enjoy my work very much. I've always loved to bake and cook and it makes me so happy when people (especially Hubby) love my cooking.
My favorite things to cook
I love making anything Mexican or Italian, and I've recently been trying to cook very healthy dishes. I love making all kinds of desserts, too. Especially cookies and cheesecakes.
My favorite family cooking traditions
My cooking tradition is to start baking about 20 different kinds of cookies about two weeks before Christmas to give out as gifts and I sell some of it to my coworkers and customers, and also some of my husbands coworkers. I get very tired and stressed out with all this, but it's rewarding to see how excited everyone gets over my cookies!
My cooking triumphs
I've just recently started making real cheesecakes in a springform pan, and the three that I've made have come out really good. I never thought I'd be able to make these come out so good.
My cooking tragedies
I have trouble with candy-making. I've had to throw fudge and pecan pralines away, which was a real drag!

Black Bean And Corn Salad II
I absolutely loved this salad! I only had one can of black beans, so I also added a can of garbanzo beans. I only added half of a red bell pepper and added a finely diced jalapeno with the seeds removed. The last thing I did diffently is I added grape tomatoes cut in half instead of regular tomato. This salad is so light and refreshing, I'll definitely be making it again!

Yellow Squash Casserole
We absolutely loved this recipe! Followed it exactly except added a little garlic and a little extra onion and it was delicious!

Best Tuna Casserole
This was very good, but I did add about a half cup of sour cream and a little milk so it wouldn't be dry. Also, I added some garlic-pepper seasoning and a little cayenne pepper. I didn't have any potato chips, so I just used some plain dry bread crumbs. I think it would've been even better with the potato chips though.
