Quick and Easy Stuffed Peppers

This recipe was really good, although it needed more spices. I changed some things but I think I kept the recipe essentially the same. First, I used regular rice and so I started cooking it on the stove a bit before I added in the tomatoes. I didn't use a microwave at all, but instead heated the peppers in the oven. I also added a little bit of garlic, black pepper, and cayenne pepper to the rice mix. This recipe was really really easy to make yet tasty... I am definitely going to make it in the future for company as a main dish. It's really hearty because of the beans, too!

Cinnamon Rolls I

Pretty good. I followed the recipe except for the butter/sugar/cinnamon part - I just eyeballed that, but in hindsight I should have probably gone with the actual quantities, because my cinnamon rolls were not as sweet as I'd have liked. I liked how this recipe is really easy, and the making rolls from the dough is so simple. I did the 45 minute rising verison instead of overnight in the fridge. I'd make this again but follow the quantities for cinnamon and sugar and also perhaps do a frosting.

Lemon Green Beans with Walnuts

Pretty tasty. I used almonds instead of walnuts because that was what I had, but I think it went with the recipe better than walnuts would have. I just guessed at all the quantities based on the amount of green beans I had (it was less than a pound) and it still came out tasty.

Amish White Bread

Great bread. It was definitely sweet, but in a way that I would still eat with a sandwhich or meal. I used a little bit less sugar, but not a measured amount less, I just didn't fill the measuring cup quite all the way up. I used all purpose flour because I didn't have any bread flour. It was definitely pretty easy to make. I made bread one other time before this, but this bread came out really well. Kneading took less time than I expected and all in all it was easy to do this whole process after work, eating dinner while the dough rose and then baking after I had finished eating. I made the bread a second time, and this time I substituted olive oil for vegetable oil, then added in chopped kalamata olives and rosemary when I was kneading. I made 2 rolls and a loaf (from a halved recipe), and it was very very good.

Shortbread Cookies II

Delicious cookies. Taste just like other good shortbread I've had. I'd definitely make this again, and I'll probably serve it to guests with tea or just as an easy-to-make dessert.

Lemon Thyme Rice

I really liked this. I made some changes other reviewers had made. 1 - I used more lemon juice - about 2.5 Tbsp (but I wasn't too exact with that). 2 - I used a random amount of thyme - just eyeballed it - and it was fresh thyme. 3 - I added a bit of garlic powder. This seemed to take a really long time to cook, but I think it was just my warped pan. Really tasty! I'd make it again.

Balsamic Tortellini

I thought this recipe was excellent. I made a few changes, though. First, I made it vegetarian by cutting out the bacon. Instead, I fried some red pepper next to the onion, and put some balsamic vinegar on the pepper as it was cooking. I put the balsamic vinegar and parmesan cheese on to taste, rather than following the amounts. And finally, I used fresh parmesan cheese, which I think really makes anything tastier. It was great. I'd definitely make it again.

No Bake Peanut Butter Pie

Pretty good. I'm not a huge peanut butter person but I made it for my boyfriend and he liked it. I put in a little more peanut butter than called for and decorated the top with peanut butter cups. It was really easy to make which was a plus, but I have to leave it out of the freezer for a bit before it's easy to cut. I bought a graham cracker crust and that wasn't very tasty so next time I might make one. Also I'd put chocolate on the top for sure next time - the peanut butter was a bit intense for me. But I'd never make a pb pie for me so I am probably not the right person to say that. Anyway, good recipe.

Strawberries in Spiced Syrup

Maybe I shouldn't have given this 3 stars, because I think it was mostly my fault I didn't like it. I tried to follow the recipe but messed up. First, I addded the vanilla before boiling (not sure if that makes a difference). Then I guess I boiled it too long or something, because it got super sticky, like molasses candy or something, and almost glued my mouth shut. Pretty bad. If it was actually a sryup it would have been better, but I still wouldn't try again, because I don't think that strawberries need that much sweetness - it kind of overpowers the berries. Maybe if I had bad quality strawberries I'd try it.

Creamy Veggie Fondue

This recipe was excellent. I wouldn't change a thing. We put in a little more wine than it called for just because my friend really likes wine, but everything else we did exactly. We had it with homemade bread and apples. It was great! I'd definitely make it again, perhaps for company.

Basic Crepes

These crepes were pretty tasty. I ate them with the filling from the "strawberry and banana crepes" recipe on this site, and strawberries on top, and it was really sweet and tasty. I did add more water to get the right consistency to make thin crepes - my first few before I added water came out a bit thick. Good recipe!

Artichokes in a Garlic and Olive Oil Sauce

I thought this was excellent. The artichoks from a can are still tasty as long as you heat them for a bit with the other ingredients! I added more garlic than called for. After I had already cooked the sauce, I separated the artichoke leaves - I think next time I'll do that while it's cooking, to spread out the flavor even more and make it easier to eat. Very good recipe! Two of my housemates tried noodles and really liked them.

Garden Pasta Salad

Pretty good salad. I used different vegetables from what the recipe called for, and varied the amounts. My salad dressing was not good quality and it probably would have been a lot tastier if I had better dressing. I also added in some pepper which was tasty. I think feta cheese would be good too, so I might throw some of that in.

Spinach and Mushroom Frittata

This recipe was pretty good. It would definitely be a great addition to a brunch. I made several change, mostly out of necessity. 1 - I used red peppers and onions instead of mushrooms b/c I didn't have any. And yes, I fried them for a little before putting them in with the other ingredients. 2 - I used less scallions than called for b/c I'm not a huge fan of them. 3 - I used basil instead of a mixture, and also added about 1/8 tsp garlic powder. Next time I'd definitely try the nutmeg. 4 - I used whole milk ricotta by accident. Don't think it made a big difference. 5 - I threw in a little bit of feta. Not very much though. The recipe says it's done with it's browned, but this didn't brown much except on the edges. It did set more than I was expecting though, so I could definitely tell it was done. (I hadn't made a frittata before.) So I'd definitely recommend this for a brunch or part of a meal. It tastes even better the next day!

Banana Banana Bread

Very good bread. Next time I'll definitely add walnuts but I didn't have any to put in. I ended up with more batter than I could fit into my small loaf pan, so I put a lump of batter in a pie tin, and it actually cooked well instead of spreading out and being thin and burned! I used 4.5 small ish bananas to get the amount the recipe called for.

Portobello Mushroom Stroganoff

My rating is for the version that I made. I cut the sour cream to a little over half a cup, then cut the flour to about 2.5 Tbsp. I cooked the onion and mushrooms with one minced garlic clove. When the mushrooms and sour cream mixture were on low on the stove, I added: 1 tsp soy sauce, 1/2 tsp worchestershire sauce, and a dash of white wine. I used a lot less parsley - just threw some in and then decided it looked good. The recipe was really tasty. I loved it - finally I've found a vegetarian equivalent to my Mom's beef recipe! My 17-year-old cousin said that she isn't usually a huge fan of vegetarian dishes, but she really loved this one. I'll definitely make it again! Great for company, although I'd definitely double the recipe, because it was not a lot.

Strawberry and Feta Salad

Excellent recipe. I used a mixture of greens instead of romaine by itself. It does make a lot of dressing - I feel like I use a lot of dressing with salad, but I still had a ton left over. I love this recipe and will definitely make it again!

Amazingly Easy Irish Soda Bread

Pretty good bread. Very moist, sweet, reminded me of a biscuit (I'd never had Irish soda bread before). I cooked it a little longer b/c the middle seemed doughy even though a fork came out clean. Otherwise followed the recipe exactly. Didn't bother to brush (or in my case spoon) the buttermilk/butter mixture more than twice. I would definitely make this again.

Minnesota's Favorite Cookie

I did 1 cup brown sugar and 1/2 cup white sugar... doing it again I think I would do more brown sugar but less butter (or rather, I'd like a less buttery taste but don't know if putting in less butter would mess up the consistency). I also just used chocolate chips and dark chocolate chunks rather than all the morsels the recipe called for. I think it came out tasty - more buttery than I had expected but very good.
