Quick and Easy Stuffed Peppers
About this Cook
My favorite things to cook
I only cook vegetarian food. Some of my favorite main dishes are: mac and cheese, enchiladas on the stove, veggie stir fry, and mushroom stroganoff. I love making things that taste so much better from scratch, but are normally bought (like bread), and try to use ingredients from farmers' markets and local producers when I can.
My favorite family cooking traditions
When I was growing up, my mom and brother and I would always make the same Christmas cookies, rolling out the dough and cutting out snowmen, stars, and Christmas trees. Then we'd decorate them with different color frosting. I loved to eat the sweet dough, but somehow we still always had cookies to last for weeks.

Quick and Easy Stuffed Peppers
This recipe was really good, although it needed more spices. I changed some things but I think I kept the recipe essentially the same. First, I used regular rice and so I started cooking it on the stove a bit before I added in the tomatoes. I didn't use a microwave at all, but instead heated the peppers in the oven. I also added a little bit of garlic, black pepper, and cayenne pepper to the rice mix. This recipe was really really easy to make yet tasty... I am definitely going to make it in the future for company as a main dish. It's really hearty because of the beans, too!

Cinnamon Rolls I
Pretty good. I followed the recipe except for the butter/sugar/cinnamon part - I just eyeballed that, but in hindsight I should have probably gone with the actual quantities, because my cinnamon rolls were not as sweet as I'd have liked. I liked how this recipe is really easy, and the making rolls from the dough is so simple. I did the 45 minute rising verison instead of overnight in the fridge. I'd make this again but follow the quantities for cinnamon and sugar and also perhaps do a frosting.

Lemon Green Beans with Walnuts
Pretty tasty. I used almonds instead of walnuts because that was what I had, but I think it went with the recipe better than walnuts would have. I just guessed at all the quantities based on the amount of green beans I had (it was less than a pound) and it still came out tasty.
