OMGosh, we have so many that my DH actually has a document in our computer that lists what we make every holiday. Football season kicks off the food-fest and goes strong until Easter.

I can definitely remember trying to feed 30 people on a video shoot in the middle of a ranch, no restaurants and the oven wasn't working. Yes...I still have hair left.

Double Chocolate Mocha Trifle
If I could add more stars, I would!!! This is my family's/extended family's all time FAVORITE dessert. At Thanksgiving I am told to bring this (I triple and quadruple the recipe) and I have to hide it or my cousins get into it before they eat their meal. Every time I make it, I'm asked for the recipe so I've learned to keep copies of it in my purse. It even has its own trifle bowl now. :)

Banana Pudding III
This is the creamiest banana pudding you will ever eat! I won't tell my grandmother, but it beats the socks off of hers. :)

Eggplant -- Easy, Good and Tasty
This is the ONLY eggplant DH likes. He calls them Eggplant Pizzas. I peel my eggplant FIRST to make it simpler, rather than after like the recipe calls for, and cut the slices a little thinner than 1/4 inch. It makes the slices extra crispy. I've even made them like this and then layered them in a pan with tomato sauce and mozzarella and made it like eggplant parmesan.
