Ricotta Cheese Pancakes
If you want the "full fat" version of this recipe change the servings to 8. Use sugar instead of Splenda. 2 eggs instead of egg substitute and add 1 tsp of vanilla. These are the best pancakes I have ever had. I will not eat any other kind!

Eggnog Cookies I
Very bland, sorry. I even upped the vanilla and nutmeg. They are very light and fluffy though. They need frosting or something else to spice them up!

Creamy Carrot Soup
This soup is very good. I added a little garlic powder, curry, and cayenne pepper. Like others I did not drain the broth at all. I used only one can of broth (about 1 3/4 cups). I think this made it a little thicker which was good. This is probably one of the best soups I have ever made.
