Mrs. Sigg's Peanut Butter Cookies

These were very easy to make and turned out wonderfully. I did substitute another 1/2 cup butter, softened for the butter flavored shortening because I didn't have any. They were great. I cooked mine for 8.5 minutes per batch.

Spiced Pumpkin Seeds

Followed the recipe to a T and was just not happy with the results. I'm sorry. I threw them away. This is a highly rated and recommended recipe, so maybe give it a try anyway. It was easy and cost nothing. Maybe you'll have better luck.

Iced Pumpkin Cookies

UPDATE: Changed my rating from 4* to 5*. I made these again with canned pumpkin. These cookies turn out terrific. A little sticky to work with, but very easy and quite YUMMY. I baked for 18 minutes - perfect. Yielded 4 dozen cookies. I will definitely be making them again. ORIGINAL: Not sure if my four star rating is fair - you decide. The flavor and end results were great, but I had a little bit of trouble. I substituted fresh pumpkin (pureed) for the canned and cooked for 14 minutes. I cooled completely and stored to frost the next day. When I took them back out in the morning, the bottom of each layer of cookies had stuck to the top of the layer beneath it. I cleaned them up the best I could, frosted them, tben put them back in the oven at 300 for 10 minutes. After cooling (again), they were much sturdier, although still cake-like and moist. When I stored them the second time, I separated each layer with wax paper (duh). It appears that using fresh pumpkin puree made the dough a little softer. It is not as dense as the canned. Nevertheless, they are VERY good now.

Not that you need another 5 star review, but these were terrific - Thank you! Just what my 5 year old requested! They stay wonderfully soft. I made one substitution: 2tsp of baking powder for the cream of tartar. They turned out great!

Buttercream Icing

This is the first homemade frosting I have ever made. I did use all butter rather than half butter, half shortening. I've made it twice now and love the flavor and the ease. Thank you.

Aussie Chicken

Very good!!! I had experienced a number of flops with a similar recipe, so I am thrilled that this was "the one"! I reduced the honey to 1/4 cup and kept the corn syrup. This was a great honey mustard sauce. I also marinaded the chicken (dale's sauce & lemon juice) and browned the chicken in the bacon grease for flavor. Cooked the chicken 15 minutes, then added the cheese, then baked 10 minutes more. Thank you for a great recipe!

Mexican Wedding Cookies

I was very happy with this recipe. I only made one change - I substituted pecans for the almonds due to availability. I coated the cookies with powdered sugar by tossing them in a zip top bag, which cut down on the mess. I coated some while warm and some after they had cooled completely. I prefer waiting until they cool. True - not as much sugar sticks to the cookie, but it they turn out a little sticky if you coat them when they are warm. Thank you for a great recipe. I can't wait to get up in the morning and have one - or five - with my coffee.

This is a good recipe to add to your chicken rotation. We left out the Parmesan (didn't have any) and I did turn on the broiler for a few minutes to crisp up a little bit.

Cheesecake Cookie Cups

Very easy and turned out great. I didn't put enough cookie on the bottom to spread across the whole cup. I'll be able to judge better next time. I also couldn't find cherry pie filling, so I used strawberry glaze on top. This seems to be a foolproof recipe with endless variations. Next time, I want to try crumbling oreos for the bottom and leaving off the fruit! I'm saving it to my recipe box right now.

Banana Muffins II

I added 1 tsp cinnamon, 1 tsp vanilla and 1/2 tsp nutmeg. Baked 3 dozen mini muffins. My 4yr old has eaten HALF of them by himself in two days. It's a good recipe. Very easy and flexible.

Yummy Cube Steaks

I really liked this recipe. Fed my family of four and they all liked it. I didn't add zuchini, as I didn't think it would go over well with the boys. I used Del Monte diced tomatoes with oregano, basil and garlic, so I omitted the italian seasonings. It was very flavorful. Thank you.

Five Minute Ice Cream

This was very good and VERY easy. It really did only take five minutes! I substituted fresh peaches (chopped and frozen) for the strawberries. Great way to keep from wasting good fruit.

Famous Butter Chicken

We really enjoyed this. Agree with all the other reviewers that the chicken is tender, the flavor is great and it couldn't be easier. BTW read another review that said it was bland, but the reviewer substituted whole grain crackers for the Ritz type crackers. If you don't have "buttery round crackers", make something else. It's kind of a key ingredient.
