Hearty Italian Sandwiches
More than edible, but my boyfriend (who does most of the eating of the crock pot recipes I make) says it needs MORE of something. He says it was really good and had potential, but it could have been better. Next time, I'll add some more seasoning and see how he likes it.

Slow Cooker Escalloped Chicken
I poached the chicken breasts in a broth / water mixture with a bay leaf, then cubed the chicken before I added it to the crock pot. I used a couple of loaves of day old bread, one was white and the other was a whole wheat. I used a lot of sage because it's a flavor we enjoy. This was really good, really easy (if I had used dressing mix instead of cubing and toasting the bread myself it'd be nearly effortless). It's a good dish for a cold day...made the house smell like the holidays were on the way!

Easy Slow Cooker French Dip
Made it exactly as the recipe called for except I just about doubled it. Used Guinness Extra Stout and a boneless rump roast; after putting the meat and cheese on the buns I browned the cheese under the broiler for a bit. Usually a crock pot full of food will last my boyfriend a week (we are on different schedules so I always have something for him to eat when he gets in)...this lasted only 2 days! The broth with the bits of beef made the best French Onion Soup I've ever had. We'll be making this one again and again!
