Brownie Chocolate Chip Cheesecake

Reviewed: Dec. 7, 2009
The perfect cheesecake, no topings needed. I used a 10oz package of brownie mix, and regular chocolate chips that I put in my food chopper (because I did not have the mini) and it turned out perfect. I like the cocolate chips chopped up small, they did not sink to the bottom of the cheese cake. I cooked it for an hour and then cracked the door because my oven has a standing pilot. After four hours I took it out of the oven and ran a knife along the edges of the pan and chilled it overnight in the frig. It was great, my family loved it. My first cheesecake that did not crack yeah!!!!! I will be making this again.

Easy Granola Bars

Easy to make and good to eat. I followed others suggestions on cooling. I did not let them cool in the pan, after taking them out of the oven I cut them with a rolling pizza slicer and turned over on a cooling rack using aluminum foil. They came out perfect.

Peach Cake II

Reviewed: Aug. 10, 2009
My family loved this cake. After reading a few reviews I changed it a little. I cut down on the sugar, used a little over one cup and used 1/2 cup of oil and 1/2 cup apple sauce. The cake was a great way to use up my fresh peaches.

I did not like the texture of this cake. It does have a good flavor but it was heavy. I did as others suggested but it did not turn out good.

Bruschetta II

Reviewed: Jul. 14, 2009
I love this recipe. I left out the almonds and the fresh basil because I did not have any on hand. When making the pesto I only put 1/2 the amount of olive oil called for in and it turned out fine. I put it in my little chopper and it did a great job. I used cheese bread to put it on and topped with fresh tomatoes from the garden. Yum. I used the leftover pesto as a dip for wheat thins and everyone loved them.

Five Flavor Pound Cake I

Reviewed: Jul. 13, 2009
I took others suggestions. I made sure all ingredients were room temp, used cooking spray (my cake did not stick) and put foil under my pan in the oven. Some reviews had mentioned that the lemon flavor was strong, I left out the lemon and replaced it with almond extract. I cooked this cake 1hr and 45 minutes, next time I will leave it in longer the crust was golden but it could have went longer. I followed the directions and put it on a cooling rack. It stuck to the cooling rack, next time I will spray the cooling rack. I did not use the glaze and was glad because the cake was sweet enough without it. My husband loved the cake and requested a second one.

Mom's Zucchini Pie

Reviewed: Jun. 22, 2009
Great recipe. I used fresh squash from the garden in place of the zucchinie. I added some bell pepper and cooked the squash until all the moisture was gone as others suggested. I also covered the crust with foil when baking. It turned out perfect. My family loved it and it was a good recipe for using up some of the squash from the garden. Thanks for the great recipe mrs. walter.

Great Muffins. I made as directed but used frozen berries and did not use the topping. I cooked them in my toaster/roaster oven and they came out perfect. I did have to let them get good and brown so they would get done in the middle. My family loved this muffins.

Artichoke Spinach Lasagna

Reviewed: May 26, 2009
My family loved this lasagna. I only made three small changes. I did not cook the noodles as others suggested. I did not have vegetable broth so I used chicken broth. I did not use rosemary because I was out. I agree with others this would have been soupy if I had cooked the noodles but it was perfect with regular noodles uncooked and we did not miss the rosemary at all. Great recipe.

Butter Bean Burgers

My family loved this recipe. I used home grown frozen butter beans. I cooked them in water until they were soft and then followed the directions. I had to add 12 crackers instead of six and I left out the pepper so the children could eat them. Good recipe

Pasta Lasagna

Reviewed: Mar. 24, 2009
Good recipe . I used one pound of meat because that is what I had. Before cooking the meat I added Itallian seasoning. I used a little extra pasta sauce because I used extra meat but used the amount called for with the rest of the ingredients. I cooked covered until the last 10 minutes as others have suggested. Good recipe when you do not want to fool with lasagna noodles.

Deep Dish Alfredo Pizza

Reviewed: Feb. 10, 2009
My family loved this pizza. I used the recipe Pizza Crust for Bread Machine SUBMITTED BY: Marian Collins from all recipes. I made one pizza in a deep glass baking dish, added chicken and precooked onions and peppers. I used a 15 ounce jar of bought roasted red pepper alfredo sauce and about half the cheese called for. This came out perfect on the first try.
