Easy Cajun Jambalaya

This was some of the best jambalaya I've ever had. I loved that it didn't contain tomatoes, the right way to make it! I didn't add the hot pepper sauce because the cayenne was enough spice for us. I also used italian sausage since thats what I had at the house, turned out wonderful.

Middle Eastern Rice with Black Beans and Chickpeas

This was a very tasty mix of spices and textures. My sister is a vegetarian so I used vegetable stock and no turkey. I doubled the amount of rice since I didn't use the turkey. Even with the changes, this dish was still great.

I didn't really like this, I prefer more of a gravy than this provided. I thought it was a little bland and the chickpeas had to be put back on the stove for a while since they were undercooked.

Easy Veggie Samosas

I LOVED the filling, but I didn't like the puff pastry dough, next time I think I will use regular samosa dough. I also added peas because the ones that I usually get at my local indian restaurant have peas in them.

Chicken Tikka Masala

This was super easy to make and absolutely DELICIOUS!! Only thing I changed was that I baked the chicken at 400 degrees for 15 minutes, it was too cold outside to grill...turned out great!
