Spinach Lentil Soup

Great stuff! Hearty, filling, and just right for a fall evening. Crusty garlic rolls and a crisp salad are perfect accompaniments. The whole family liked this. Do be careful not to overcook the lentils or they will turn to mush.

Chicken and Red Bean Enchiladas

Didn't want to overwhelm the youngun's sensibilities, so I opted for Monterey Jack instead of Pepper Jack. Great recipe! They LOVED this! I think I will add some green chiles next time, just cause I like 'em. Thanks for the recipe!

German Apple Cake I

This had a nice crust, I expect from the amount of sugar. I found it a mite too sweet, though my sugar-holic husband deemed it "juuust riiight!" :) I will make this again with less sugar and see how we do.

Quick Italian Vegetable Soup

Great flavor! I do suggest using real shredded parmesan on top, as it has much better flavor comparitively speaking. Next time, I will add cannellini or red beans.

Twice-Baked Potatoes Supreme

these were deemed "just okay" by my family. My son wants me to try another recipe. I like the oregano and cayenne combo, but still wasn't happy with the overall flavor. Thanks anyway!

Buttermilk Chocolate Cake with Fudge Icing

Flavor was amazing, though I anticipated a bit different texture. The family loved this. I just liked it. I did, however, LOVE the glaze. I used a whisk throughout cooking instead of the beaters and it was fine. Really nice in a bundt pan, just be sure to add 10 minutes or so to cooking time.

Kentucky Butter Cake

This had amazing flavor! It was beautiful, and very tender. Almost TOO tender...it began to crumble a bit as we sliced it. Really good with the butter glaze, though I might try a citrus version next time. I was thinking, would an extra egg help it hold together a bit better?

Banana Cake X

The flavor was amazing. Really nice banana flavor. The texture, however, was a bit too "light" for my preference. Indicative of a boxed cake mix. I might use this again to give to someone when I need a quick recipe, (it was well received by friends!) but in general, I'll make my scratch version, adding an extra banana and a tipple of lemon juice.

Banana Pancakes I

So full of flavor! These won over my skeptical family who really prefer my tried and true pancakes to any "flavored junk". :D I've tried caramel apple pancakes, cinnamon apple pancakes, pumpkin pancakes, peanut butter pancakes, all to no avail. FINALLY! I have flavor respite!

Creamy Macaroni and Cheese

This was just okay. My daughter, who is a mac and cheese NUT, loving ANY variety, said "eh." I think less Dijon, and a mild cheddar (we prefer sweet cheese to piquant in macaroni dishes) would have made it preferable. The ratio of sauce to pasta, though, was way to high! Who wants to eat mac and cheese soup? (okay, my girl, but she's the exception!)

Louisiana Sweet Potato Pancakes

Six Threes Ice Cream

I've always made ice cream with seasonal fruits, but this was the EASIEST and freshest flavor EVER. The citrus real adds that "brightness" to the flavor. We topped ours in the bowl with toasted coconut and chopped toasted almonds. It was an awakening!

Chocolate Covered Easter Eggs

Not crazy about the coconut. The texture was off. However, the peanut butter, cocoa, and butter cream were great! I would suggest thickening the butter cream just a tad, as these eggs were a bit more "loose" in the dipping process.

Butterscotch Fondue

I did find I had to cook this a few minutes over the recommended time, and needed to be cautious of sugaring, BUT this was FABULOUS! I served it alongside the Chocolate Bar Fondue from this site, on a "girl's weekend away." The kudos came rolling in! Pretzels are really good in this, and it's even good the next day stirred into coffee. This is a keeper.

Chocolate Bar Fondue

I went on a ladies retreat and served this side by side with the Butterscotch fondue (also from Allrecipes). It was the hit of the weekend! Even cold the next morning, we were dipping pretzels, stirring it into coffee, putting it on fruit salad, and then rewarming it for dessert that evening. (Did I mention we were a bunch of gals getting away from it all, and chocolate usually plays a major part? :) Be forewarned, this makes A LOT, not that that's a bad thing. In the future, I may try flavoring with orange (Grand Marnier or Cointreau) or Raspberry liquer. This is a keeper.

Chiles Rellenos Pie

everyone ate it, and said it has a certain appeal. My husband, the true chile relleno lover, however, did not deign it a true keeper. If I try this again, I will def. make a few adjustments.
