This fools guests every time. I have made it a number of times without letting on that it's zucchini until later, and people comment that it just tastes like a different type of apple. This is a great recipe and I love it especially since I am allergic to apples but love apple pie. Regarding the recipe, I cooked the zucchini in a little bit of water in a saucepan to get it tender and then sprinkle with lemon juice. I beleive the lemon juice is the key to getting it to taste more like apple pie. I would advise to not forget the lemon juice. I also use a little less sugar to save on calories and to help in the trick I typically use little apple cookie cutouts on the crust as in my photo.
