Broccoli Rice Casserole

This was pretty good...but way too much celery...the flavor was overpowering. Next time I will half the amount of celery called for in this recipe!

Sausage Balls

these were pretty good, but not my favorite. of course, it may have had something to do with the fact that my husband bought italian flavored sausage instead of the regular. i'll probably try them again and see how they turn out.

Portobello Bellybuttons

This was a great easy meal. I fixed portobello sandwiches earlier this week and needed to find some way to use up the leftovers. I halved the amount of button mushrooms and added about a cup of steamed asparagus to the dish. It was delicious. We'll definitely make this again soon!

Creamy Chicken Breasts

Man! These were good! Very moist and tender. I honestly thought the marinade sounded kind of weird, but after reading all of the wonderful reviews I decided to give it a try. I am so glad I did - I'll definitely be making this regularly.

Marinated Pork Tenderloin

This was great! I had 2 1bs of tenderloin so I had to double the recipe. I only had about 1/2 the amount of soy sauce I needed. So instead of doubling the vegetable oil, I added 3 T. of Sesame Oil to add more flavor and 3 T. of vegetable oil. Marinated 2 hrs and cooked according to directions. Very tasty. Will definitely make again. FYI: In my local grocery store they only have HUGE bottles of apricot nectar, no small cans as this recipe calls for. But I like to make an Apricot Vinigarette from this site in the Cranberry-Pear Tossed Salad recipe. If anyone has to buy the bigger bottles, you can use up the extra by doing that.

Lemon and Cilantro Shrimp

This was really good. I served it over linguini. I only had 4 lemons, but that gave it plenty of flavor and I added 1 clove of chopped garlic to the pan. It's a really great light dish that doesn't overpower the shrimp. Definitely a recipe to keep on hand. For a little extra flair, I am thinking that next time I may use limes instead of lemons and serve over rice with MARGARITAS! Yummy!

Cranberry-Pear Tossed Salad

DELICIOUS! I used fresh raspberries instead of dried cranberries (most of my family won't eat the cranberries) and took this for Christmas dinner. It was a HUGE hit - almost everyone went back for seconds.

Blue Cheese Pear Salad

This was delicious, but I did make a few changes to the recipe. I used candied pecans instead of the toasted walnuts and used the apricot dressing from the Cranberry-Pear Tossed Salad recipe from this site. I took it for Christmas dinner and I think almost everyone came back for seconds. It was a huge hit!

Quick and Easy Shrimp Fajitas

This was really good and really easy, and that makes it a winner in my book. I mixed my raw shrimp with about 1/4 cup of cilantro and the juice of 1 lime and let it marinate while I cut and cooked the vegetables. Then prepared it exactly as directed. I served it with whole wheat tortillas, spanish rice and chips and salsa. Hy hubby loved it! Definitely one to make again.

This was a really good recipe. I used 3 bananas instead of 2 and mashed them as so many reviewers recommended. Other than that, I followed the recipe exactly. I think it is really good banana bread - it just lacks that WOW-factor which is why I gave it 4 stars instead of 5.

Chicken Noodle Soup

Very, very good. I also used the boiled chicken recipe on this site to prepare the chicken before hand and added a few cups of broth from that instead of all water. I think it added a lot of flavor to the soup.
