Banana Bread VII

This recipe is awesome! It was so easy to put together. I really liked the idea of using a baking mix. I added 1/4 tsp cinnamon to my loaf and that was perfect! The only thing I could mention was that it was a bit sunken in the middle - maybe adding a small amount of baking powder would help that. Very moist and delicious! My 4 year old gave it rave reviews!!

Lighter Snickerdoodles

A very tasty lower fat/calorie cookie. I am on Weight Watchers and they are only 3 points each! The dough can be sticky so be sure to spray your cookie sheet with a non-stick spray. I also sprayed my hands with the non-stick spray to make it easier to roll the balls out. Watch your bake time! These taste dry if you bake too long - all of mine came out perfect at 7 min. Spinach Lasagna II

Very good basic recipe. I used a jar of spaghetti sauce and a can of petite diced tomatoes with Italian seasoning. Even my 4 year old who hates spinach loved it!

Hot Artichoke and Spinach Dip II

THIS IS AWESOME! Best spinach artichoke dip I've ever had and very easy to make. I think it took me all of five min. to put together. I didn't have any romano cheese so I used all parmesan. I baked it in a glass pie dish. No other changes need to be made. Perfect!

Sausage and Apple Stuffing

This is the 2nd time I've made this recipe. The first time I didn't read the recipe well (prepare stuffing to package directions) and just made it with the listed ingredients. This time I followed the directions and it was very good. I used a whole lb. of sausage and one granny smith apple (a huge one). Thanks!

Jam Filled Butter Cookies

These were very easy and fun to make. I made them with my 4 year old daughter and we both loved them! I didn't make the holes big enough for the preserves, so it was kinda hard to get the preserves in. I used the end of a wooden spoon. Next time, I'll just use my finger, it should work better!

Weekend Brunch Casserole

Very tasty! Here were the changes I made: used 6 eggs, 1 cup skim milk, shredded colby jack chesse and I added a liberal dash of hot sauce to the eggs instead of the black pepper. I pre-baked the crescent rolls for 10 min, then baked the casserole a total of 25 more min. Crust was crispy - next time will pre-bake crust a few less min (maybe 5 min). Not at all soggy like some other reviews. Overall VERY yummy! I may try and make a lower calorie/fat version in the future - I'll let you know how it turns out! Note: this reheats REALLY well - husband likes to put hot sauce on top!

Meat Loaf Pie

Loved this recipe! Made a few changes. I did not use the pie crust - recipe doesn't really need it! I did not have any canned corn so I heated up some frozen mixed veggies and added them to the cooked beef/onion mix which I liberally seasoned with seasoned salt. Added about 1/4 cup of ketchup and about 2 tablespoons worcestershire sauce. Used homemade mashed potatoes with sour cream added. Next time will add 2 eggs to the meat and maybe one to the potatoes. Was really tasty! Thanks for the recipe!

Spiced Pumpkin Seeds
