I love to bless my family with good tasting, healthy food. I use allrecipes.com more often than not to look for new recipes. I'm a bit of an fanatic when it comes to this website because it's so easy to access when I need a recipe, quick. I work part time and enjoy the rest of my time staying home with my son, who's a toddler. I am very happily married to a wonderful husband and father who is a youth pastor.
My favorite things to cook
I LOVE to make things from scratch and I will always hunt for these types of recipes. We also live on a pretty small budget, so cooking this way really helps us stretch the dollar. All of the preservatives and additives and artificial ingredients also really motivate me to make it from scratch. All in all, I love the way things taste when made from scratch, so I try to make it standard practice in our home.
My favorite family cooking traditions
My mom really didn't cook a lot, so when I got married I pretty much started my recipe collection from nothing. Two years prior to getting married I lived in a co-op girls dorm in college (Love Memorial Hall) where we had to cook meals for 7-8 girls for a whole week, 2-3 times per semester. That's really when my experiences began.

Louisiana Sweet Potato Pancakes
I thought these were pretty good. It wasn't a planned meal, we just had a random sweet potato on hand that I didn't have a use for. I loved adding in a vegetable to pancakes. I did add cinnamon & vanilla, and a little extra sugar.

Angela's Awesome Enchiladas
We LOVED these!!! Thank you so much for the recipe. I have tried 3-4 other enchilada recipes that I've never wanted to make again because they were just 'ok'. These were awesome, just as the name says!! I didn't even use the green onion or black olives, which we love, but just didn't have on hand. I also used 1/2 the cheese called for, because that's all we had. And they still tasted great. My husband even loved them, and he doesn't typically care for sour cream or chunky onions and green chilies...which says a lot. Again, I'm super excited to finally have found a recipe that tastes great, one that I can make for company, and one that we all love. Even my 15 month old was gobbling up the chicken! Thank you!
