Easy Bacon, Onion and Cheese Stuffed Burgers

Reviewed: Jul. 2, 2009
These tasted great. They were easy to make but I wouldn't say it was quick. By the time you fry the bacon and prep and cook everything, it can take time. I think we spent about 50 minutes from start to finish including the grill time. They were definitely a crowd pleaser.

Quick Pasta Sauce

Reviewed: Jul. 2, 2009
It's hot today and I didn't want to spend a lot of time cooking. So I thought spaghetti! Of course I had no pasta sauce. I found this recipe. Of course, I did not have a 28 oz can of crushed tomatoes. I did have a 14.5 oz can diced tomatoes pre-seasoned with basil and garlic. So I substituted that and used a few leaves fresh basil since I grow it. Tossed with the pasta and sprinkled with Parmesan. It was yummy and no one noticed it wasn't the typical sweeter taste of a store bought sauce. And it was ready in less than 15 minutes!

Very Simple Spelt Bread

Reviewed: Jun. 5, 2009
Just tried this and it turned out great. I halved the recipe, used almond milk, added 1/2 tsp xanthan gum and made them as hamburger buns. The baking time was reduced to 25 to 30 minutes. I got about 6 buns. Next time I will try to get them more even in size.

Mexican Casserole

Reviewed: Apr. 14, 2009
This was wonderful. I made it as in the recipe using equal amounts salsa and water. I also used a little more cheese on the top layer. And to make it even easier, I used an oven-proof skillet so it went straight from stove top to oven! It's a great meal that was fairly fast and everyone enjoyed it.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Reviewed: Apr. 8, 2009
Thank you thank you for giving a gluten free chocolate cake that surpasses any other I have ever tried. And the best part - the whole family loved it, even those that are not gluten sensitive, and they still don't know about the garbanzo beans! I also could not find a 19-oz can but I read somewhere that was about equal to 2 cups, so I did a 15 oz can and added applesauce to make the 2 cups. YUM!

Chicken Pot Pie I

Reviewed: Oct. 30, 2006
This was incredibly easy to do. I used leftover BBQ'd chicken breast and frozen mixed veggies (which I microwaved before adding to the pie mix) and it turned out delicious!
