High Temperature Eye-of-Round Roast
This was JUST wrong! I followed the directions to a "T" and the meat was not rare...it was RAW 80 degrees. After an hour at 350 it was perfect but I have issues with uncooked meat being left to harbor bacteria for 2- 1/2 hours! Won't be making this again.

Brunswick Stew
Lots of room to personalize. I used crumbled chirizo instead of salt pork and added okra to the veggie mix. I used "planned over" chicken breast which I added at the last minute just to warm through. Served with hot biscuits...GREAT easy, autumn dinner.

Stuffed Bell Peppers, Greek Style
This was wonderful and easy! I too had to use ground beef... couldn't find lamb. I doubled the mint and used green,orange,and yellow bell peppers. I also topped the peppers with 8oz reduced fat Feta cheese for the last 15 minutes in the oven. A real treat!
