Cajun Style Baked Sweet Potato

Delicious! I cut into bite sized pieces and doubled the recipe so we could enjoy leftovers the next day. :)

I followed the recipe exactly with the light syrup and it was delicious! It was plenty sweet. I think the dark syrup would have been too much. Another reviewer suggested adding a bit of salt. I might try that on the next round to cut the sweetness a little, but it is delicious and super easy as is. Thank you for a great recipe!

Pesto Sauce

Delish! I added an extra clove of garlic and a little extra oil to loosen it up, but other than that it was perfect! Thanks for such an easy fix. :)

Stephan's Broiled Salmon Pesto

I enjoyed this recipe, but my husband loved it. I felt I had to blacken the pesto in order for the fish to cook through. Next time, I might try baking a little and then broiling at the end. That said, I would give it 4 stars, but my hubby would give it 5. Since he liked it so much, I'll give it 5. I used a pesto sauce recipe off of this site and used my fresh basil from the garden. The sauce was definitely delish!

Amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches

Delicious marinade! I didn't make sandwiches, so I can't rate the whole recipe, but I'm sure it would be delicious. I used marinade and made kabobs on the grill. Wonderful flavor! Will try the sandwiches another day.

Marinated Wild Salmon

I would give this one 6 stars if I could! Delish! I only had 3 hours to marinate and it came out fine. I didn't add green onions because I didn't have them and I went heavy on the red pepper flakes, but other than that, I followed recipe exactly. I baked in the oven and broiled like the recipe said, but I will definitely try on the grill like other reviewers. :)

Firecracker Grilled Alaska Salmon

I did not have peanut oil or sesame oil, so I subbed canola oil. Everything else was the same. Delicious! Will definitely purchase the other oils and try again. I bet it would be even better.

Chili-Lime Chicken Kabobs

DELICIOUS! I like things spicy, so I added about 1/2 teaspoon of cayenne pepper. I also added a little lime zest to the marinade. So good and so easy! Will definitely be making again!

Salmon with Brown Sugar Glaze

I wish there were more recipes like this. So good and soooo easy! I grilled on the BBQ instead of broiled. Because I BBQ'd, I greased the grill rack with olive oil first. That was my only modification. DELICIOUS!!!!!

Chocolate Chip Pumpkin Cookies

These were OK, but I have to admit that I was disappointed with them after all of the rave reviews. The cookies were very cake-like. I tend to like a denser cookie. I also thought they lacked the spicy pumpkin flavor and I even added a few extra spices that the recipe didn't call for. I added about a tsp of nutmeg, a few dashes of clove, and about 1 tsp of pumpkin pie spice. Despite the additions, I didn't find them flavorful enough. Sorry.

Apple Turnovers

Yum!!!!!!!!! Will definitely make again! I skipped the glaze, but I did brush them with a little melted butter and sprinkled granulated sugar on top before baking. Delish! I did have some trouble with the triangles exploding, but I'm willing to practice getting these right on another round soon. :)

Stuffed Peppers with Turkey and Vegetables

All I can say is, OMG YUM! I would give this 6 stars if I could. This was delish! I modified slightly by adding two cloves of crushed garlic to the mix and a lot of spices (oregano, basil, parsley, crushed red pepper, garlic powder, and pepper). Also, at the end, I broiled it for 1 minute just to char the peppers a little. I did everything else the same. The peppers were crunchy, so I might bake them a little longer next time I make this or omit the aluminum foil, but I didn't think that they were too crunchy to enjoy. Will definitely make again and again!
