Garlicky Baked Butternut Squash

This was so simple and delicious I had to rate it a 5. I added the cheese about 10 minutes before taking out of the oven. I diced the squash fairly small so it took about 40 minutes to cook.

Chicken Enchiladas IV

These were pretty good. I used flour tortillas and I used the salsa. I added cheese about 5 minutes before I took them out of the oven. I did think they were a little better the next day.

I didn't care for this. My husband liked it well enough which is why it's getting 3 stars. I just didn't care for the honey. I felt like it was missing something or needed to be altered a bit.

Chicken Milano

Loved it! Took advice from others and used 1 cup chicken broth and 1/2 cup white wine and 1 1/2 cups cream. Cooked chicken first in skillet and then kept warm. Removed pan from heat and added butter and cooked garlic because pan was hot from cooking chicken. Put back on burner and added tomatoes and chicken broth. Cooked until soft and then added wine and cooked for about another 3 minutes or so to reduce wine. Added basil at this point, cooked for a minute and then added cream. I let the cream thicken and then cut up reserved chicken and added to pan with juices. Tossed in cooked pasta and served. I had to let it sit for just a bit to allow the pasta to absorb sauce. Thanks for a great recipe!

Fried Rice with Cilantro

I replaced 1 tbs of oil with sesame oil. I beat 2 eggs and scrambled in the pan before adding the rice and other ingredients. I omitted the fish sauce as I didn't have any. Squeezed lime over the top before serving. Love the jasmine rice! Delicious!

Filet Mignon with Rich Balsamic Glaze

This was fantastic. I will however say that it took longer for the filets to cook than recipe called for but I think it was because they were really thick and I've never cooked them indoors before. I browned in skillet for a minute or two per side and then added 1/2 cup red wine and 1/2 cup balsamic as I was making 4. I minced 2 cloves of garlic and added to skillet as well. I covered and cooked for 12 minutes turning occasionally. My sauce was reducing too quickly even though I had the heat on medium and I was concerned about this so I put the meat on a baking sheet and finished the meat in the oven. Added gorgonzola per another reviewer right before they were done. I then added more red wine to the skillet and cooked that down a bit and added 2-3 tbls of brown sugar and 4 tbls of butter and let it thicken while the filets were resting. Plated the meat and poured glaze over top. This was so tender and so delicious. Restaurant quality for sure.

Shrimp Scampi Bake

This was fantastic. I halved the recipe and added a splash of white wine to the butter mixture. Used frozen jumbo shrimp (which I thawed first) and let it cook for 15 minutes which was perfect. Served over penne with french bread for dipping and husband loved it. The dijon really adds a nice taste to the dish. Will definitely make again as this was so quick, easy, and delicious.

Charleston Shrimp 'n' Gravy

This was very easy to make and tasted delicious. I would have preferred it to be a little more runny, more of a gravy consistency but I could just add more chicken stock next time. Served over white rice.

Cheese Enchiladas

This was very delicious. I did change it up a bit. I used red enchilada sauce instead of the mixture in the recipe. I also used a combination of monterrey jack with jalepenos, mild cheddar and taco seasoning cheese. I doubled the amount of cheese called for in the recipe. I didn't have any mushrooms so I omitted those. Whole family enjoyed.

Four Cheese Macaroni

This was great! I did make a few changes otherwise I would have rated a 5. I used 1/2 c monterrey jack with jalapenos, 1 c white sharp, and 1/2 c parmesan as well as velveeta and mild cheddar. Had no muenster on hand. Used only 1 egg. Mixed 4T melted butter with 1/2 c panko and sprinkled on top. Put broiler on last few minutes to crunch the top. Thanks for the recipe!

World's Best Lasagna

I followed the recipe with the exception of using mild sausage instead of sweet italian and this was really salty. I should have followed the advice of others and omitted the salt completely. I think it's worth trying again and hopefully will then be a 5 star recipe for me.

After-Thanksgiving Turkey Soup

This was really good. It tasted like the filling of a turkey pot pie. I made this a few days after Thanksgiving so I didn't have the turkey carcass lying around so I used chicken broth out of a can. I halved the recipe and used 2 cans of chicken broth plus one cup of water with a chicken boullion cube. Added some leftover corn and this was delicious. Thanks for a great way to use up all that turkey!

Big Ed's Cajun Shrimp Soup

This was very quick and easy to make. I think I let it simmer too long because all the liquid absorbed into the rice and it really wasn't a soup anymore but more of a gumbo type dish. I couldn't find clam juice so I bought a can of minced clams in clam juice and this worked great. I did add celery and 3 cloves of garlic. Will make again.

Curried Coconut Chicken

This was fantastic! I used less than 2 lbs of chicken and it was still delicious. I kept all the other amounts the same and made 2 cups uncooked white rice to go with it and it was perfect. I served steamed veggies on the side. Will definitely make again and again.

Iced Pumpkin Cookies

I was looking for a cookie that tasted like one from a bakery that I love but this wasn't it. It was however very good but I think it may be better with a cream cheese icing.
