Best Brownies

Reviewed: May 29, 2009
These were good, but were missing something specific. I have another brownie recipe that hits closer to what I'm looking for in a cakey, chewy, fudgy brownie. This is still a good recipe though.

Chocolate Trifle

Reviewed: May 29, 2009
Made this for my sisters first baby shower. Everyone devoured it first thing. I thought it was very good (after licking what was left on the spoon and scraping the empty trifle dish) Very simple recipe just be sure to remember that it needs to sit in the fridge as stated!!!

Actually Delicious Turkey Burgers

These are just what they claim to be - actually delicious turkey They are in our regular rotation and have completely replaced beef burgers in our home (which were not often served) and we make these frequently.

Black Bean and Corn Quesadillas

Reviewed: May 29, 2009
These came out ok. I love sweet and spicy so I was hoping for something out of this world but got "good" instead. I think the problem is that I usually make my quesadillas with chicken, carmelized onions, green onions, black olives, lots of cheese and some refried beans for glue. So - compared to what we're used to the flavor intensity was under par. For ease and cost though, this makes a good, quick lunch.

Angel Chicken Pasta

Reviewed: May 29, 2009
This is super creamy and had good flavor. I didn't realize that the golden mushroom soup had tomato (and my husband is allergic) so I can't make it for us anymore but he did truly enjoy it when I made it last year. Served over less pasta but left everything else the same.

Cheddar Bay Biscuits

dThese came out good - but my husbands biggest complaint is that you can really taste the bisquick mix flavor too much. I think you would be better off with a home made biscuit recipe adding in the cheese, and other seasonings.

Chicken and Biscuit Casserole

Reviewed: May 29, 2009
This came out pretty well, I love basil and think I went a bit heavy on it which threw the flavor off the first time. I made my own bisuits (DO IT!) and it is a warm, satisfying meal for a chilly evening. Nothing over the top though.

Magic Cookie Bars II

Reviewed: May 29, 2009
These are the perfect version of the classic. I thought they were just too easy the first time I made them, but my pastor said they are his favorite dessert and they were the best ones he'd ever had. They are simply perfect. I tend to add a few more chips (both butterscotch and chocolate) These are in my permanent recipe book!

Peach Cobbler Dump Cake I

This game out a bit "gooey" for me and I'm not sure why. My husband and kids enjoyed it though. Served it piping hot and the pan was emptied quickly.

Caesar Salad Supreme

Reviewed: May 29, 2009
Not only is this incredibly easy when you toss everything into a mini food processer...it's got no raw egg and tastes AMAZING. I'm incredibly selective when it comes to Ceasar (only enjoy it when ordered at a specific italian restaurant in South Florida) and this dressing is almost identical. I followed the recipe exactly; with the exception of using FRESHLY shredded parmesan cheese over the top before mixing and serving. I didn't do the croutons right though and they came out very plain - not sure what went wrong. Will try them again and the dressing is an instant staple in my recipe book! This recipe made enough for me to nicely coat 2 chopped hearts of romaine with HALF of the dressing left over! Woohoo!

Clone of a Cinnabon

While I felt these were excellent (followed recipe instructions to the letter) they weren't a clone of a cinnabon. However - without comparing it to the title I would rate them a 5!

Best Lemonade Ever

Reviewed: Apr. 21, 2009
Followed the directions exactly and loved the results! Tart and sweet (not too sweet for our tastes). I dropped a few of the lemon halves into the water I heated up for the sugar just to infuse a little extra lemon flavor. We loved this!

Muesli

Reviewed: Sep. 28, 2008
I make Muesli a few times a week for my family of 5. Here is how I got my husband to TRY oatmeal and LOVE it with almost no time or effort! I simplify this to equal parts rolled oats and fat free milk with a little cinnamon and sugar (if desired) with raisins and blueberries. To make things even easier - I use those ingredients and mix them before bed, cover with wrap and put it in the fridge. The oats get a deliciously chewy texture and everything is super cold since it chilled overnight. (I even heat it for my little ones when they wake up chilly) For blueberries, I use the blueberries we picked and froze because they thaw perfectly by morning. All but the milk and berries can even be premixed in bulk and kept on hand to make it even EASIER! Don't forget - put in whatever you want for mix-ins! Nuts are great!

To Die For Blueberry Muffins

Reviewed: Sep. 1, 2008
I gave these a five - but I'm not sure they are to die for. They are really light and fluffy and the muffin itself is not too sweet. I usually love crumble toppings on things, but I really didn't care for this one. It made too much of a crumbly mess and although my muffins didn't stick to the pan, I had to struggle to get them out without breaking the solid sheet of crumble on top. I will make these again without the topping and if I ever try the topping again I'll use brown sugar like I wanted to do - I just decided to follow the recipe straight the first time. I doubled the recipe and got 24 muffins and there are only 3 left today. They were a hit with everyone (it seemed I was the only one who didn't care for the grainy texture of the topping). The muffins truly were very good all things considered!

Classic Waffles

Reviewed: Aug. 23, 2008
I was looking for a new waffle recipe and gave this one a try this morning. I added more Sugar (about 2 1/2 TBSP) but otherwise followed the recipe exactly. The waffles were light and fluffy with a nice golden "crust". I may add a touch more vanilla next time. Between that and the needed sugar this recipe is perfect! Also, one thing it took me a while to learn in making waffles - they NEVER turn out fully risen if I sprinkle things like blueberries or chocolate chips before closing the lid. It's a completely different waffle - so leave them plain and get creative with what you put on top of them when they are finished! Thanks for the recipe! This will be replacing my old one.

Rosemary Ranch Chicken Kabobs

Reviewed: Jun. 12, 2008
I thought the chicken came out moist and tender (as many reviews have mentioned) and the flavor was good. For me, I thought the worcestershire was way too "front and center" for a chicken kabob. I put aside about 1/2 of the marinade (per suggestions) before adding the chicken to use as a dipping sauce or to add to the rice I served it with. I didn't care for it on the rice but did like it as a dipping sauce. Overall an good recipe (slightly above ok but below really good) This was a nice easy dinner to throw together though since I had everything on hand.

Antipasto Pasta Salad

Reviewed: Jun. 12, 2008
I didn't add tomato (allergy sensitive) or cheese (allergy sensitive) I let it sit overnight and it turned out very dry. Throught the day I ended up adding tons of extra balsamic (in total, about 12 oz) I also added a little more oregano since the balsamic became more pronounced but I liked the sweetness it provide. I would have given it 3 stars based on my liking of the flavor - but with the compliments I received, I gave it 4. I just didn't see what the rave reviews were for this time around. I'll try it again soon to be sure all was done properly on my end.

Creamy Chicken and Wild Rice Soup

Reviewed: May 16, 2008
I've made this soup a few times now and it's one of our favorites. I never use all of the flour called for (makes it too goopy and thickens fine without all of it) I also just took some of the other suggestions and sauteed a little onion and garlic before adding in the broth, water and chicken to the pot. The first couple of times I made the soup I used the cream, but tried it tonight with 2% milk and it was just as good (it lost a little "richness" due to the swap out) never the less it was still incredibly thick and creamy. It was great, we had the pleasure without the guilt. I always shred a good cup of carrot to throw in when I add the rice and I like to chop celery for some great flavor and texture too. My 5 year old (who's quite choosy) LOVES it and calls dibs on the leftovers every time I make it. Incredible recipe - thank you so much for sharing it! ***Update - used Specialty "Chicken Broth with White Wine and Herbs" in place of regular and it blew our minds!

Jo-Ann's Power Bars

Reviewed: Mar. 12, 2008
I've made these several times over the past two weeks and have really enjoyed being able to swap out the major flavor makers. The first batch was by the recipe using dried cranberries for the fruit and sliced almonds for the nuts. I added in a little coconut and left out the sunflower seeds b/c I didn't have any. They came out good - but these are VERY HIGH FIBER! Just so you know! My husband didn't care for the flavor of the first batch. He requested a second which I just made with: pumpkin seeds, dried goji berries, ground flax seeds(in place of 1/2 of the flour), a little coconut and a handful of whole almonds. There wasn't enough crunch in the first batch for him - so these are perfect. I almost doubled the cinnamon too since there are a lot of flavors going on and I think it goes nicely with the nuttiness of the flax. I made a batch with chocolate chips and coconut (coconut oil in place of vegetable) for my 5 & 3 year old with great success - next time I'll leave out the cinnamon with that one though. I also made a tropical version for me with dried papaya, pineapple and coconut. Thank you for a great basic recipe that is SO quick, easy and healthful. Play around to make it suit your taste and health needs!

Delicious Black Bean Burritos

Reviewed: Mar. 6, 2008
I thought these were awesome with the couple of tiny changes/additions I made. I went by the ingredients with the exception of adding a little over a teaspoon of kosher salt in place of the 1/2 tsp and I took the advice of many and I added a few good dashes of Chili Powder as well as a couple of shakes of Cumin. I can't stand the flavor of cream cheese, but have no problem with it if it's covered up with flavor so you can't taste it. That was definitely the case with this recipe. I was concerned after reading other reviews mentioning that they just didn't see how cream cheese fit into the meal - but it was completely flavored by each of the other ingredients - especially with the addition of the spices. It also provided a perfectly creamy consistency for the dish. I will be making this often and freezing for my lunches. My 3 year old loved it, my 5 year old couldn't get past the "red things" and wouldn't eat it. While I was inhaling mine, my husband asked if there was a rating below 1. I couldn't believe it! Please try this recipe and make any additions you feel are appropriate. This is a great meatless dinner, especially with some Spanish Rice on the side. Enjoy!
