This was EASY, Healthy, and we LOVED it. We took advice of someone else and chopped up 1 red pepper added in with the corn, kicked up the heat with additional cayenne becasue we like it HOT, and served in honey wheat tortilla shells w/ chopped organic cabbage, blue cheese crumbles a squeeze of lime and a dollop of sour cream. Oh my goodness! This is a keeper!!
