Apple Raisin French Toast Strata
I took this to a brunch this morning and everyone raved about it. I used Aunt Hattie's raisin bread, added more raisins,the cinnamon and vanilla suggested by other reviewers. What a great breakfast treat!

Lemony Shrimp over Brown Rice
This was absolutely scrumptious! And quick! I used precooked shrimp because that's was what I had on hand, and that made it even quicker. I also substituted cilantro for parsley. Both my husband and I loved it. Thanks for this recipe - it is a keeper in our household as far as we are concerned.

Marinated Black-Eyed Pea Salad
I took this to a pot luck last night and everyone loved it. With black eyed peas selling at $1.49 a can, I decided to make my own peas in the slow cooker the day before (they were $1.49 a bag!). I put them in the refrigerator overnight and drained them the next day to make the salad. I used cilantro in place of parsley. Yummy! Absolutely yummy!
