Black Bean Hummus
Big time YUM! I've been looking for ways to use beans (high fiber, protein, and decent amount of iron) and this is a winner. I added extra lemon juice, used olive oil instead of "bean juice" and omitted the cayenne since my 1-yr-old would be eating it. A big hit--it's already half gone and I made it 10 min. ago. I'm going to double the recipe next time. Fresh lemon juice is a must.

Oaty Cereal Bars
Very yummy. I used half honey half light corn syrup and let the sugar mixture boil for 1 min. (to try to keep the honey taste from being too overpowering). Set up very nicely as bars after it cooled. The peanuts really add a lot. Kinda tastes like a PayDay bar. Thanks!

Ten Minute Enchilada Sauce
This was VERY yummy. Now, I don't know what authentic enchilada sauce tastes like, but next time I'm going to try cutting back on the chili powder a little, (it was very spicy,) as well as the water and the oil. It was very yummy, but I think cutting back on the oil would make it a little healthier, and cutting back on the water a little thicker (I just used regular flour. Self-rising flour might have had a different effect.) Thanks for this delicious, easy recipe!
