I've made this soup twice so far, and am just now getting the opportunity to review it. The taste is wonderfully divine. I've been increasing my cooking skills in Indian cuisine more lately, and had to try this recipe. I must say, this is a bit Americanized compared to others, but the taste does not reveal that one bit, it seems! My husband loved it ( and that says a lot when he tells you over and over ) :D He does not like cooked apples either, so I would suggest grating the apple if you add it. I omitted the second time, and my husband told me to leave the recipe like it is. I did not feel the need to add the cream. However, I feel that coconut milk would be a wonderful addition to it instead of cream or half and half... Much Healthier, too!!! Good monounsaturated fats are always the way to go. Thank you for this awesome recipe. This will not be made around the house at least several times a month. ;D UPDATE: 3/19/09 -- I STILL LOVE THIS SOUP! And so does my husband. :D I can never go wrong with soup. I always add more carrots than what it calls for, though. :D YUM, YUM! :)
