Mother of 1 daughter, stepmom of 2 boys. :) I am wife to my sweet husband. I stay at home with my daughter and am slowing attaining my Assoc. of Nursing degree. I love to cook!
My favorite things to cook
Thai and Indian curries have been my favorite the past few months. I fell in love with a dish I had at the local Thai kitchen. So far, I have gotten to sample several of them. Mussaman, panang, Red, & Yellow curries. all with chicken, since I like it more than other meat. I am trying to imitate those at home for my family. Have successfully done so once, but am improving on my work with the addition of some new spices in my pantry.
I love to bake brownies and cookies, too. That's always a treat here.
And have tried using a less sugar approach to that, too, since refined sugar is not our friend. :O I try to use honey, and have begun using natural Stevia in my confectionaries.
My cooking triumphs
Mulligatawney Soup, featured here on AllRecipes. My husband loves it, and has requested it to be made at least twice a month.
Also, my thin pizza crust. I don't like thick crust, and my crust would always turn out that way until I found a great crust recipe!
My cooking tragedies
1)Black-eyed pea mush with frozen, cooked spinach in it. *silence*
Spinach- I could live without it. But I do know it's healthy, so I try to incorporate it into my dishes every once in a while.
2)Too many to count.... I experiment quite a bit. Probably too much sometimes.
