About this Cook
I have found a new found joy since becoming a career firefighter. Cooking!
My favorite things to cook
Anything new and challenging. My signature dish: Chicken Franchaise and my meatballs and sauce
My cooking triumphs
Cooking everything for my childs birthday party at home rather than getting it catered.
My cooking tragedies
The beef pockets at the firehouse. (Balsamic actually doesn't make all sauces great!)

Crab Stuffed Mushrooms
I make htese for my wife who loves stuffed mushrooms. They are quite easy to make. The key is the green onions. They seem to add a flavor that makes these complete. I sometimes add bread crumbs to the mix if it seems to wet. Easy to overdo it with the mayo.

Mixture for Meatballs, Meatloaf or Burgers
Similar to my firehouse meat balls. Try using the meatloaf mix for this recipe. (beef, veal, pork) use 1 egg and 1 slice of bread per pound of meat. Soak the bread with milk rather than water. Add bread crumbs as needed to dry the meat mix slightly so that it does not stick to your hands. I usually use about 3 pounds of meat and the guys devour them!
