Swiss Chard with Garbanzo Beans and Fresh Tomatoes
This recipe was so yummy! I didn't have green onions or shallots on hand, so I minced some fresh garlic (maybe about 4-5 cloves), heated it in the oil and then followed the directions as is. The fresh tomatoes add such a nice flavor and the garbanzo beans give it a hardy taste. Definitely making this again. Thanks!

Mom's Zucchini Bread
This bread is awesome! I combined the advice of several different reviewers and used 1/2 whole wheat flour + 1/2 white, I added 1 tsp nutmeg (mmm!), substituted 1/2 cup applesauce for 1/2 of the oil, used 1 cup white sugar and 1 cup brown sugar (though I might try to decrease the white sugar to 1/2 cup since it was still very sweet), and added 3+ cups grated zucchini. It took between 50-60 minutes to bake. It was very moist inside and crispy outside, and incredibly tasty! Thanks!

Bran Flax Muffins
These muffins are so yummy that my 2 year old daughter gobbles them up, even my picky 3 1/2 year old son likes them, and my husband who is skeptical of anything 'healthy' tasting thinks they're delicious! I used all whole wheat flour instead of white, wheat bran instead of oat bran, and 1 cup applesauce instead of the shredded apples - moist and delicious!
