About this Cook
I love to bake and my husband is not into sweets so that leaves me to do all the taste testing!! I am big into convenience cooking during the week using my crock pot and whatever i can find in the fridge and on the weekends I like to experiment with new recipes and make big meals. I am really into Mexican cuisine and that may be due to the fact I live an hour from the border!
My favorite things to cook
I prefer baking by far but unfortunately I can not live on cookies and cakes...
My favorite family cooking traditions
It seems like every family even we have, and there are plenty, is centered around food and most time is spent in the kitchen.
My cooking triumphs
Making a perfect cheesecake, it took a few tries but it was well worth it!
My cooking tragedies
I don't consider any mistakes a tragedy really it is all part of the learning curve.

Banana Banana Bread
this is by the far the best banana bread I have made. It is so moist and dense it is really full of banana flavor. This recipe is simple and easy to put together definitely a winner just how it is.

Chicken Enchiladas II
this recipe is very good the flavor of the basic recipe is excellent. it is a littl emild for my tastes but this is a versatile recipe and you can add a little more kick to it by the way of extra chilis or chili powder. I took the advice of other reviewers and doubled the sauce and it was just perfect. i double the recipe and it doesn't last more than 2 days in my house!

Slow Cooker Creamy Potato Soup
This soup is so good. I did add a little extra black pepper and also a few grinds from an Italian season grinder. Thank you so much for this recipe it is a keeper!
