Spaghetti with Broccoli and Mushrooms

Reviewed: Oct. 31, 2009
Faboulous- With these adaptions: Use fresh garlic and fresh basil instead of dried, and add 5 fresh chopped tomatoes. In terms of cooking, mix in the parmesan when serving rather than cooking it with the vegetables. Fantastic, thanks for my yummy lunch x

Alicia's Aloo Gobi

A very good vegetarian curry, especially if your feeding a big (or very hungry!) family. I made a few adaptions, i used half/half natural yoghurt and vegetable stock instead of coconut milk, left out the cinnamon, and added the garam masala at stage two. I will make again, next time with lots of chopped fresh coriander for extra oomph.

Creamy PHILADELPHIA Penne Pasta with Chicken

Reviewed: Aug. 23, 2009
Righty. rather nice and really quick, very good when you dont have much time but you want flavour. But adaptions are needed, hence three stars. I doubled the milk, added garlic and some sliced mushrooms. When you add everything, dont cook for 5 minutes make it 10 so it thickens. Thank you, yummy!

Alfredo Blue

Reviewed: Aug. 17, 2009
It was quite nice but a couple of points to add. when it says 115g blue cheese, make sure you dont use too strong blue cheese like stilton, otherwise the sauce will be overpowering. I reccomend not melting the parmesan, and just sprinkling it on top the pasta when serving, with some chopped fresh parsley. It was nice though, i served it with penne, some parma ham and rocket. Any leftover sauce is great mixed in with mash.

Broccoli Noodle Side Dish

Reviewed: Aug. 14, 2009
Hey, great quick healthy lowfat recipe for lunch. Essential tip: After cooking the broccoli and mushrooms in oil for a 1-2 minutes, add 30ml soy sauce and 30ml water to help the broccoli to cook and to stop it burning. I also added a handful of cashews, and added a dash rice wine vinegar when serving. Thanks for your recipe (:

Addictive Sweet Potato Burritos

Reviewed: Aug. 13, 2009
I think that this is a very good base recipe, something that people could add anything to and it would still taste pretty good. I made a few adaptions myself. I used vegetable stock instead of water, i used far less chili powder, and i added a big handful or fresh chopped cilantro and mixed in it before serving. Listen to reccomendations: Sour cream compliments it very well.

African Curry

Reviewed: Aug. 13, 2009
The end result i got from this curry was delicious, but i ended up needing to make many adaptions. 1. I use diced chicken breast instead of a whole chicken 2. I used the 2 tbsp of sugar like everyone reccomends 3. I used 2 tbsp of mild curry paste instead of curry powder 4. And i added a chopped red bell pepper. Very tasty with my adaptions i think

25-Minute Tunisian Vegetable Couscous

Reviewed: Aug. 4, 2009
Heya, now what a lovely recipe! Im surprised im the the 4th to rate. I changed a few things: I didnt bother with the carrot or the orange peel, and i used about 150ml less vegetable broth. It was a fantasic dish, and i served this on the side of baked potatoes and cottage cheese. YUM.

1-Pot, 3-Bean Chicken Stew

Reviewed: Jul. 28, 2009
Really fantastic recipe, thanks for posting. Adaptions i made: I used 2 tins black beans because i couldnt find navy beans anywhere, im not sure whether theyre called something different in the U.K but i cant find em. I didnt add the smoked chicken, (oh and the italian herbs i decided to use were mint, oregano and thyme) I served it with mash and my boyfriend went back for thirds, he really loved it.

Zucchini with Chick Pea and Mushroom Stuffing

Reviewed: Apr. 5, 2009
I served these with tomato sauce and it was 'ok'. But, couple of adjustments would rather work. 1- Add some grated cheddar on top. 2- Listen to other people's suggestions, puree half the mixture, otherwise it's impossible to eat!

Broccoli Chicken Stir-Fry

Reviewed: Oct. 13, 2008
Any recipe claiming to be a 'stir fry' with over 500ml of liquid has gotta be taking the mickey. Aaaanyway, what i did was use 60ml chicken stock instead of the water. Oh and i added a roughly chopped garlic clove when i cooked the chicken as well. And completely ignored the whole cornstarch thang. If you use little liquid, like i did, its just not neccessary.

Insanely Easy Vegetarian Chili

Agreed, Insanely easy! Delicious, full of veggies and very low-cal considering how much it makes. We served it with brown rice, but i reckon it would make a very good topping for baked potatoes.

Ratatouille

Reviewed: Oct. 16, 2007
Hey, ive made this recipe quite a few times now, and i think that with these improvements, you could have a 5 star dish: 1) Fry the onion with the aubergine and garlic. Otherwise the onions still stay crunchy when youve got them out of the oven. 2) You dont have to layer it if you dont want to. Its just if you need to be particularly careful over presentation. 3) In the last 5 minutes of cooking, take the lid off the casserole dish, to allow the parmesan to brown slightly 4) Leave the casserole lid off for the last 15 minutes of cooking, to try to evaporate the liquid that stores up at the bottom of the pan. Otherwise, you'll end up with a rataouille soup! Anyway, thanks for sharing!

Spinach and Black Bean Pasta

Reviewed: Oct. 16, 2007
Hey, what a lovely recipe! Great way of getting my veggie-hating brother to eat his greens! However: Just one problem with the recipe..WAY TOO SPICY! I advise to use 1/4tsp of the cayenne pepper, as it is a very strong spice. Oh and i made this dish with two adaptions, i used a tin of black eyed peas instead of black beans, and i use penne instead of rotini pasta. But yeah, if you added less cayenne, i would say this is a 5 star recipe!

Roasted Fall Vegetables

Reviewed: Oct. 11, 2007
Quite nice, i made a few adaptions though. I used 1/2 the amount of olive oil, as me and my family are on a low calorie diet at the moment. I used halved shallots instead of pearl onions. I added 1/2tsp of sugar, in order to help the vegetables to retain a lovely colour. I reccomend putting it in the oven for 50 minutes, instead of the full 1 hour. And remember to take the tray out of the oven halfway through cooking, and stir around a bit, to avoid burning.

Corn Off the Cob Salad

Reviewed: Oct. 11, 2007
What a lovely idea for a recipe! Im very surprised it hasnt been rated yet! I got interested in the recipe, because i got braces recently, and so i cant really eat corn on the cobs normally (however much i love them!) Ok, i think this recipe yould be awesome: WITH these adaptions: Instead of the garlic powder, use 3 cloves of garlic, crushed. Use 1 whole red pepper. Use 1/2 the lime reccomended. So im giving it a good rating, mainly because i believe that with these alterations, this would be a brilliant recipe. We actually served this warm instead of as a salad, and it worked out fab.

Simple Swiss Chard

Reviewed: Oct. 7, 2007
Hey i dont really see why people are being so negative about this recipe, i think its great! I used half the balsamic vinegar, as others reccomended, and i poured the excess liquid before serving, and it turned out lovely. If your worried about the vinegar becoming too overpowering, remember to not use strong balsamic vinegar. I highly reccomend adding a pinch of sugar, to combat the vinegars acidity. Thanks for sharing

Broccoli Cheese Bake

Reviewed: Oct. 6, 2007
Hey, i made a few changes to the recipe, but it turned out fabolous and my family just yummed it up! All gone in seconds flat. Ok, so it turns out i didnt have enough broccoli for the recipe, so i used 2/3rds broccoli and 1/3rd frozen peas (i added the peas into the sauce with the steamed broccoli). Instead of swiss cheese, i used 1/2 cheddar, 1/2 lancashire cheese. Oh and if you want the bake to be a nice colour, after the 30 minutes cooking time is up, put the dish under the grill for a few minutes until golden brown. Great recipe, thanks for sharing!

Bok Choy, Carrots and Green Beans

Reviewed: Oct. 6, 2007
Absolutely fabolous! Really low-cal, packed full of veggies and vitamins. Remember to use low sodium stock! Otherwise it'll be too salty. Oh and to add flavour, i added 1 crushed garlic clove at the beginning of the recipe. I think if your eating this by itself, as a stir fry it has too much liquid in it. But if you mix it with rice or noodles or something, they soak up the liquid so it isnt much of an issue. I served mine with some cooked white rice. Thanks for sharing!
