I've made this twice now. Both times I omitted the celery.
Used chopped onions from the frozen veggie aisle and pre-cut, pre-cooked potatoes from the produce section. I also subbed chicken paste for bouillon and 1 cup half and half for part of the milk.
The first time I used already diced ham. The taste was good, but the potatoes were larger than the ham pieces. The second time, I used a package of kielbasa(sp)sliced into pieces and then each slice halved. We all enjoyed this soup.
