Peanut Butter, Mayonnaise, and Lettuce Sandwich

My absolute, most favorite sandwich. When I was in labor with my 19 year old, the doctor asked what the last thing I had eaten. Of course, it was peanut butter and mayonnaise. He replied that pregnant women eat the strangest things. My DH told him I ate it even when not pregnant. I think it grossed the doc out.

Teriyaki Chicken

Use low sodium soy sauce and boneless, skinless chicken breasts. Wound up marinating for 3 days and then stir frying. Man, was it good. Not salty at all.

Broccoli Rice Casserole

Yummy. Halved the recipe and it still made a lot. Used 1 can cream of mushroom, 16 oz broccoli, 1 boil in bag of rice and 8 oz of the cheese. I didn't have celery and didn't feel like chopping an onion but don't think they were missed. Served with Gina's Lemon Pepper Chicken. Nice meal.

I've made this several times. Easy, quick and moist. Took an extra salt shaker and filled with the spices so I always have them on hand.

Marinade for Steak I

Pat's Baked Beans

Made these for our Father's Day BBQ and they were a big hit. Nice flavor. I did sub a can of baked beans for the garbanzos. Will make in the crock pot next time.

Lemon Pepper Chicken I

Best Spanish Rice

I use butter instead of oil to brown the onion and rice. When we have tacos this is the recipe I use. Try stirring a little bit of browned hamburger into leftover rice for lunch the next day. Yum

My Amish Friend's Caramel Corn

This was my first try at caramel corn and it was great. I made two batches because the first one seemed to "disappear". I used mixed nuts for the first batch and cashews and peanuts for the second.

Cocktail Meatballs I

Yummy and easy. I doubled the sauce and used bread crumbs instead of oats. Next time, I'll use less bread crumbs, I didn't take into consideration that bread crumbs are finer than oats. Kept them warm a crock pot.

Juicy Fruit Salad

I didn't have any grapes and didn't seem to miss them. I cut up 2 small gala apples (skin on)and used a can of mandrian oranges. Chilled overnight for breakfast. The pineapple juice kept the bananas and apples from turning. Very juicy.

Baked Ziti I

My family enjoyed this, it made a lot so I split it with my neighbor. Next time I'll use 2 smaller pans as suggested. Substituted the sour cream for ricotta and sauted garlic with the hamburger. Very cheesy and creamy. Will be making again. Thanks

Delicious Ham and Potato Soup

I've made this twice now. Both times I omitted the celery. Used chopped onions from the frozen veggie aisle and pre-cut, pre-cooked potatoes from the produce section. I also subbed chicken paste for bouillon and 1 cup half and half for part of the milk. The first time I used already diced ham. The taste was good, but the potatoes were larger than the ham pieces. The second time, I used a package of kielbasa(sp)sliced into pieces and then each slice halved. We all enjoyed this soup.

Texas Rice

My not picky 7 year old and myself were the only ones home for dinner so I decided to give this a try. Cut the recipe in half and subbed garlic salt for the salt. Also used a 14oz can of diced tomatoes. Just right for a kid's taste buds. Next time I'm going to try using leftover rice. Easy and yummy.

Chocolate Eclair Cake

I've already made this twice! The first batch I used sugar free vanilla pudding and the second time I used sugar free banana. Banana was everyone's favorite. I also used honey graham crackers. I didn't have much luck with the frosting, so I heated a can of milk chocolate frosting for the topping. The longer it sets, the better the crust gets. Yum!

Famous Butter Chicken

My family loved this one. I used chicken tenders, (that's what I had in the freezer)garlic powder instead of salt and 1/2 a stick of butter. Very good.
