I live in Missouri, but my Soul belongs in Jackson Wyoming. We have been out there camping several times and have enjoyed nature at it's finest. My Family and I enjoy fly fishing, camping, kayaking, hiking, off road atving and anything to do with the outdoors. My husband and I are empty nesters now and still have our Kids wanting to go camping with us. We do alot of cooking in our dutch oven while we camp and always get great reviews. I always did all he cooking when we went camping, but now my Husband does the cooking in the dutch oven:-)That frees me up to enjoy a nice walk.
My favorite things to cook
Anything with alot of flavor. Mexican, Italian, Indian. (I love curry)I use my slow cooker alot and love to come home from work with dinner almost on the table. When I have Friends over, I love to make my killer salsa recipe to go with Beer Margaritas. Very refreshing on a warm summer day sitting on my deck.
My favorite family cooking traditions
Up to just about 5 years ago I was a Disaster in the kitchen. I grew up in a big Family and all I can remember making was a salad and setting the table.( I make a MEAN salad) I really never learned to cook from my Mom, She was too busy trying to get dinner on the table. The only recipe I got from her was a chili recipe.. She made the Best, and so easy....I took Her chili recipe tweeked it a bit and entered it in a contest. I won 1st place!
My cooking triumphs
I guess it would be my 1st. place chili recipe. I can proudly say I won 2 years in a row. The first year I entered 2 chili recipes and won 1st. & 3rd. place. From then on I was hooked. I wasn't afraid to try new recipes. One year for Christmas, I put together a recipe book for both my kids with their favorite recipes. It is just a simple 1 inch 3 ring binder, so They can add their own recipes. I am proud to say my Son loves to cook & does a wonderful job. He is a fly fishing guide in Jackson Wy. and makes some really good dishes with fresh trout.
My cooking tragedies
My first date with my Husband. I made this vegaterian meal. Everything was so bland, not to mention he is a meat eater. I am surprised he asked me out again. We still laught about that:)

Slow Cooker Chicken Cacciatore
THIS IS A GREAT basic recipe. I followed recipe and added some of my favorite ingredients. Sprayed cooker with veg. oil,( makes for easier clean-up)then added frozen chicken. In skillet with olive oil sauted onions, minced garlic pepper and sliced portabella mushrooms & added a splash of dry red wine..Meanwhile mixed spaghetti sauce with small can of tomato paste and a can of Hunts fire roasted diced tomatoes with garlic. Added fresh basil, oregano, parsley and 1Tablespoon McCormick's Tuscan Italian Seasoning. Added to crock and cooked on low for 5 hrs. Chicken was VERY tender and not a bit dried out. Served over Rotini whole wheat blend pasta. It's like Heaven for the taste buds. ENJOY

Chicken and Artichoke Pizza with Fresh Tomatoes
This was REALLY good. If you like artichokes you will love this. I used about 1/2 to 3/4 cup pizza sauce (as suggested by other reviewers) then added 3 sliced tomatoes, layered cheese (1& 1/2 cup fat free) chicken mix & sprinkled it with fresh basil. Then topped with about 1/2 more cheese. I used a Boboli whole wheat crust.I also used some left over turkey tenderloin from the night before.YUMMO!
