About this Cook
I'm a stay at home mom to 2 boys; 4 years and 6 months. We just moved to Colorado and so far we love it here! I love to bake, get outside, play with the kids, and keeping the TV off. :)
My favorite things to cook
I usually get into recipes that I myself will eat; I'm somewhat of a picky eater and I know the chef is required to eat their creations, right?! With that said, I love to bake because I have a major sweet tooth - yum!
My favorite family cooking traditions
I definitely get into cooking for the holidays. I have many memories of my mom going all out, and it's a tradition I'd like my boys to remember too.
My cooking triumphs
I haven't gotten too creative yet. My biggest baking accomplishment of the year was my first apple pie (all from scratch) this last Thanksgiving. It was awesome!
My cooking tragedies
My biggest tragedy is frying; I am just awful at frying. I usually burn it, so I avoid it at all costs. If my hubby won't eat it (I don't have a dog) it will get trashed.

Roasted Butternut Squash and Garlic Lasagna
it was definitely yummy, however, the no cook noodles were not soft enough. I will probably pre-cook them next time. good flavor and fairly simple to make.

Squash Stuffed Chicken Breasts
the chicken had good flavor and my entire family enjoyed it, but it was far too much work to be worth it. if you try this, I would encourage thicker breasts and increase the baking time.
