Chicken Quesadillas

This recipe is so quick and simple and easy to change to suit your tastes. I chopped up some leftover chicken, used green onions and added some chopped tomatoes. I used a combination of mexican cheese blend and 3 cheese blend. I served them with a spicy ranch dip. So good.

Hearty Hamburger Soup

This is a great recipe. I like my vegetables a little chunky so I chopped the onions and carrots instead of minced. Other than that I followed the directions exactly. It is a nice thick and tasty soup. It also freezes very well.

Mom's Macaroni and Cheese

This was edible but nothing special. After reading the reviews, I increased the velveeta to 4 oz and the cheddar cheese to 1 1/2 cups but I found it bland and not as creamy as I was hoping. I also did not care for the bread crumb topping. Sorry, but I won't be making this again.

Old Fashioned Potato Salad

I left out the sweet pickle relish and I used Miracle Whip instead of mayonnaise. I have never used mustard or added celery and garlic salt to my potato salad before and it was a nice addition. For me 1 cup of celery is too much - next time I will only use half the amount or may leave it out all together. Other than that it tasted really good and I will make it again.

Di's Delicious Deluxe Deviled Eggs

These taste just like my mom's. I left out the hot pepper sauce, but other than that I followed the directions exactly. I chopped the onions and celery very fine with my mini chopper, and I piped in the filling using a plastic bag as suggested by another reviewer.

Pork Tenderloins with Roasted Potatoes

This recipe was quick and easy to prepare. The pork was moist and tender and tasted great and the potatoes were nice and crispy. I will definitely make this again.

I have tried several different recipes for chocolate chip cookies and these are by far the best. I made my cookies smaller - about 1 1/2 tbsp, but other than that I followed the directions exactly. I baked them at 300 degrees for 15 minutes and they were perfect - crisp on the outside and chewy on the inside. They taste so good! This is the only recipe I'll use from now on. Thanks for a great recipe!

Easy and Fast Cajun Chicken Caesar Salad

This is a great salad! I sprinkled cajun seasoning on the chicken breasts and broiled them in the oven instead of frying them, then sliced them after they were cooked, and I just sprinkled the parmesan cheese and bacon bits on the lettuce and dressing mixture. Yummy!

Coffee Cake Supreme

This cake was just O.K. for me. I used brown sugar instead of white for the filling as suggested by other reviewers and it was not sweet enough for me. I also found that it was over-baked after 50 minutes - the outside crust was quite hard. I may try this again though, with a few changes - I will bake it for 40-45 minutes at 300 degrees and add a glaze over top.

Peanut Butter Heaven

These are very sweet but so tasty. The middle sinks in, so I found the chocolate layer a little thick in the middle. Other reviewers have said that they had to bake a lot longer, but I used a 9x13 pan and they were done in 20 minutes. This one is definitely a keeper. Thanks for the recipe.

Easy-To-Stuff Manicotti

This recipe was certainly easy to stuff, but I'm not sure I like the string cheese as the filling. It didn't really fill the shell and didn't melt like I would have liked. It tasted pretty good but I think I would prefer a ricotta cheese filling.

Chicken and Vegetable Stir-Fry

This is one of my husbands specialties. It is so good. He uses broccoli, cauliflower, carrots, celery, green beans, green pepper, bean sprouts and green onions, but does not add garlic. We top it with plum sauce. A great recipe.

Lighter Banana Muffins

I cut the recipe in half because I only had 2 bananas. After reading other reviews that said they turned out a little dry, I took other reviewers advice and added 1/4 cup unsweetened applesauce and 1 tsp vanilla. I also added 1/3 cup chopped walnuts; and topped the muffins with a mixture of brown sugar and cinnamon. The muffins tasted very good and were actually pretty moist. It made 8 muffins. Thanks for the great recipe!

Cajun Chicken Pasta

This was pretty good. Instead of the mushrooms, I used 1/2 red pepper. I used rotini instead of linguine. It was very creamy, but I would add more cajun seasoning the next time.

Roast Beef Stuffed Shells

These were pretty good. I used leftover roast beef and gravy, and used old white cheddar cheese. I had the horseradish sauce on the side because I was not sure if I would like it - it was okay, but I prefer it without. A nice way to use up leftover roast beef.

Pecan Pumpkin Loaves

I made 1 loaf and 1 1/2 dozen muffins out of the batter. The muffins baked in 20 minutes. I followed the directions exactly, except I did not add the pecans. The muffins were excellent. Nice and moist. My co-workers loved them. I will definitely make this again.

Pumpkin Cookies II

I have to say when I mixed up the batter I was not sure that these were going to turn out - the batter was very oily (maybe next time I will replace some of the oil with applesauce),but the end result was a very tasty soft muffin- like cookie. I also added 1/4 tsp ginger and 1/4 tsp cloves and did not add walnuts. Would definitely make these again.
