Tomato Enchilada Bake

I had been looking for a red sauce enchilada recipe and this one is great! I added some shredded cheese to the filling and sauteed the onions with some garlic in butter before adding it to the filling. This was great! I would maybe add a little bit more chili powder to the sauce next time (my husband said it was too much like straight tomato sauce). Otherwise very good! Re-heated in oven well too!

Savory Crab Stuffed Mushrooms

This was my first attempt at stuffed mushrooms but they turned out great! I would use a little less crabmeat next time - the crab taste overpowered the cheese and mushroom tastes. These were easier to arrange than I had imagined.

Champagne Punch III

I made this punch for a New Years gathering and it was a big hit - especially for those who prefer not to taste the alcohol. It tasted like spiked kool-aid with pizzazz! Wouldn't call this a classy fine cocktail but it served its purpose for me perfectly. Served out of wine glasses made it seem more special.

I made this recipe even better by using 1/2 ground pork and 1/2 ground round. I couldn't find fresh oregano but the ground worked just fine! This sweet sauce was a perfect combination with the tender meatballs.

Cottage Cheese Chicken Enchiladas

My husband and I decided that we prefer this cheesy chicken enchilada recipe over any other. The sour cream and cottage cheese combo balances out the spicy chicken perfectly. I used the hot taco seasoning to give it an extra kick! It was great!
