Chocolate Chip Muffins
4 Stars with alterations. I didn't try the base recipe. I read the reviews before trying this recipe. I made the following alterations: 1. Used 1 c chocolate chips. 2. Used a heaping quarter cup of white sugar and a firmly packed 1/4 cup of brown sugar. 3. Used 1/2 c canola oil; added an extra splash of milk. 4. Added 1 tsp. vanilla extract. 5. Stirred batter to combine, less than 20 strokes. Then let the batter sit for about 10 minutes. 6. Added a streusel topping instead of the sugar sprinkle. 7. Reduced baking time to 15 minutes. Despite the reduced baking time, the muffins were still overdone and consequently a little dry. But it's close... Next time I will try reducing the baking temperature (to 350 deg; 400 seems high to me) and watching the time very closely.
