Instead of baking the chicken, I fried the chicken in a few tablespoons of olive oil. I also flattened the chicken so it would cook a little faster. I did find the recipe a little bland (even though I used Italian style bread crumbs (next time I will add more seasonings). This is a great dinner to cook after work and very easy.

This recipes is awesome if you are looking for something to prepare quickly. I use Rice a Roni's wild rice. I also add mushrooms like others suggested. Thanks for the great recipe!

I added a couple of tablespoons of taco seasoning to the sour cream before placing it on the potatoes. Instead of using garlic powder, I used minced garlic and let that sit in the olive oil. I also doubled the oil/spice mixture because it is so tasty. This was a great dish!
