Basic Crepes

My husband thinks these are better than the crepe restaurant in town. I make these sweet by sub-ing in sugar and then add bananas with white chocolate sauce or peanut butter.

Bacon Ranch Pasta Salad

Really easy to make and everyone loves it. I find it a little bland if you don't add Lowery's or something...I also use cherry/grape tomatoes whole so that people can either pick them out or it won't gunk up your leftovers. Definately go with bacon bits over real bacon - the flavor comes thru more.

Sangria by the Pros

HOLY COW!!! This could very well give me a drinking problem. I revised slightly and failed to read the directions...I didn't soak for 2 hours but it was still phenomenal. I used Franzia chillable red (a box makes about 5 pitchers of this). Omitted the pineapple - love it but sounded weird for sangria. Spiced rum (way good)instead of brandy. Frozen can OJ and then just took a 1/4 chunk out and lopped it in the pitcher. 2 cans of 7up/Sprite to "smooth out" - if you plan to drink the whole pitcher pour in right away. Otherwise, as suggested (great idea) top individual drinks off so it doesn't go flat.

Artichoke & Spinach Dip Restaurant Style

Update: I just made this again for a Halloween get together and it is still fabulous and I never have leftovers. I made this for a New Year's party and it was a hit!!! I was a little worried after reading the reviews that the alfredo might be too prominent so I made a few adjustments. I made a double batch and used a 16oz jar of alfredo, 1/4c fat free plain yogurt, 1/4c low fat mayo, 1/4c more of mozzarella and 1/4c more of parmesian. I also just used minced roasted garlic. I didn't read the directions properly and I mixed everything together - which is the way to go. I then cooked it on low in my slow cooker so it could be kept warm all night. It tasted better than any restaurant dip I have ever had AND it passed my picky husband test - he raved about it. I will definately make this recipe again!

Banana Crumb Muffins

These were very good! I substituted nonfat yogurt for the oil/butter and they turned out very moist and really heavy/filling. I waited until the last 5 minutes to add the topping - which made it a little difficult to put on since they had risen. I am debating on just adding it before cooking or seeing what would happen if you mix it right in to the batter. Great way to get rid of old bananas!

Molten Chocolate Cakes

Great for a chocolate fix. The second time, I substituted Splenda for the sugar and spray butter for regular butter and they came out just as delicious. I also didn't beat the eggs for 8 minutes either time...don't know what sort of difference that makes.

Twice Baked Potatoes

Very good! It passed the "picky husband" test with flying colors. I substituted nonfat yogurt for the sour cream and left out the mushrooms, since he doesn't like them. A little bit time consuming to make but definately worth the effort!
