Pumpkin Apple Streusel Muffins
Very good - very moist. A little sweet, but very tasty. I can never do streusel topping right, but what ever I came up with still tasted great.

Roasted Rack of Lamb
Wonderful and easy! I made this as a special birthday treat for my husband. I was a little intimidated to try "rack of lamb" but was delighted with the results. I would cut the salt used in the breading in half. I served it with roasted potatoes. My husband said, "This is the best meal you've ever made me!"

Chicken Enchiladas I
Great recipe! Took other's advice and did not include water, the filling was perfect. I used two cans of tomato sauce for filling and one was a Picante which gave it a nice kick. I also used canned enchilada sauce, two cans. Perfect! Word of warning, this is not the typical "cheesy" enchilada, the filling is more creamy, tomatoey. Good, but not what I was expecting.
